Last night was a huge serving of steamed asparaus (yum!) and a filet of broiled lemon/pepper seasoned catfish. I did have a glass of wine with that, although some folks have trouble matching wine with asparagus.. Tonight is probably some steamed mixed vegetables (cauliflower, broccoli, carrots, maybe some potato) and leftover bbq chicken. But really its a mystery because the husband is cooking tonight and he's been looking at the brussels sprouts...so I'm not sure what's in store.0

Spinach, mushroom and onion stuffed pork chops. The recipe says to cover with flour and fry in butter but I'm going to bake them with a little low-sodium chicken broth instead0

If you get a big beefsteak tomato and scoop out the seeds, put the tuna salad in that and a slice of mozzerella on top and bake for about 15-20 minutes at 350.......... *drool* It is the BEST dinner! Kids are not such a fan, but they are really tasty.0 -
