I'm not the best photo taker.
    But Salsa lentils.

    2012-03-20132747.jpg

    1 Cup red Lentils
    1 tablespoons olive oil
    1/2 cups chopped yellow onion
1 Tbsp cloves garlic, finely chopped
    1/2 cups chunky salsa
1/4 Pack taco seasoning mix or 1/2 Tsp Cummin & 1/4 or more Tsp Cajun/ Cayenne
    So Easy and Yummy.

I like to add golden flax seeds too.
I make my own Taco Seasoning mix and my own salsa

    Coconut Burfi (Indian sweet)

    IMG_2964_web.jpg

My recipe is similar to this - http://indianfood.about.com/od/sweetsanddesserts/r/cocobarfi.htm
It uses condensed milk instead of the traditional method. Traditionally, it is made with milk solids (khoya) that can only be found in Indian store. This recipe should give good results.

Black beans and salsa..............................boring I know................

I've always said that if I could only eat one thing for the rest of my life, it would be tortilla chips with salsa. Boring is in the eye of the beholder, my friend. ;)

Thank you! I'd imagine full-fat coconut milk or soy creamer thickened with agar or cornstarch could be a good vegan sub for the condensed milk, and earth balance or other vegan margarine for the ghee. Sounds delicious!
