2 oz. low-fat cream cheese
2 eggs (whites only)
1 packet truvia
1/2 teaspoon cinnamon
77 calories for 4 pancakes
Blend all ingredients until smooth and cook as you would with regular pancakes. Add whatever toppings you'd like to kick it up a notch! I love adding a few chocolate chips and topping with berries.

Just tried these...interesting results. Not at all pancakey texture. Fell apart and became more like sweet scrambled eggs. Probably my fault for putting all the batter in at once and not making 4 individuals pancakes rather than one large one. It really took on the cinnamon I added.0
