    bumping to try later! I wonder if Ricotta would work instead of cottage cheese. I hate cottage cheese!

    Although there is cottage cheese in the recipe you absolutely cannot taste it! When all is blended you would never be able to tell that is in there. These end up tasting a bit like french toast. They are REALLY good!

    Okay, I have to say, I have made these for everyone in my family (all who have so kindly actually spit some of the healthier recipes I've made in the trash and out the car window...and I am not joking!) and they all love them! One even said they were the best pancakes he's ever had...and he's a GOOD eater! Haha

    I was on the go this morning and could not eat syrupy pancakes while driving...so I added a few more tbsps of oatmeal and put a few tbsps of sugar free syrup in the batter! Built in syrup...mmmm

    Are these american style small pancakes or the really big ones that takes the whole pan?
    It says 1/4 cup of batter per pancake, so probably not the whole pan kind.

    Can it be made into a vegan recipe? I was thinking of taking out the egg and cottage cheese and adding tofu. I am not Vegan. I am a new Vegetarian... but I do want to try some vegan options. Opinions?
    Tofu does not substitute for cottage cheese and egg whites, so the texture and taste will be different. Different ingredients means a different outcome. On the other hand, try making some and let us know. Mabye it will be interesting....
