Not really potatoes but my hubby is a pasta freak. We tried this one actually with lean ground beef, and he loved it!
Oh, and he's never been over 140 pounds in his life, so the word 'diet' is foreign to him.

My fella is the same, so his parents used to put what they called 'Stelth veg' in things like shephers pie, curies, etc. Basically they cut things up very small so he didn't notice them and couldn't take them out, gradually they got bigger and bigger and now he will have tomatoes, onions, peppers and mushrooms in things, fajita, stirfrys, still small chunks though.
Bizzarlly he's always like califlour cheese but not califlour on it's own!!!0 -
I've had to ditch beef while dieting, unless it is ultra-, ultra-lean. I basically stick to chicken or pork chops, baked in an oven with salt, pepper, garlic powder, cayenne and maybe a little thyme. Try to use little to no olive oil.
As for potatoes, just boil some small red ones, maybe a little butter or oil, but I usually try not to.
My favorite to have with meat is a veggie cooked with tons of onion / garlic / shallots. Brussel sprouts, chopped up, cooked with shallots is incredible. Green beans cooked with shallots is incredible. Broccoli cooked with onion and garlic is incredible. I just chop things fairly small, cook them in a fry pan with a minimal amount of olive oil.
A plate of a baked pork chop (actually pretty lean and low-cal compared to most tasty cuts of beef), with brussel sprouts / shallots and some boiled red potatoes is amazing and filling. Especially with a glass of red wine!0 -

i made a taco turkey loaf just the other day and man was it yummy.... everyone made it disappear
1lbs ground turkey
1/2 cup chopped onion
1/2cup of green pepper
10 saltine crackers
1 packet of taco seasoning
bake in oven on 350 for around 40 min and enjoy
will make 4-5 servings0 -

Kulli1's "stealth veg" comment made me laugh! There was a cookbook put out several years ago; it's supposed to be how to sneak veggies into your kids meals without them knowing, but it would work for adults too, I suppose. I found a free copy of it on Scribd for you:

his favorite so far is what i call ranch potatoes.
take small red potatoes calories depend on the size you use . cut them in half if larger in 1/4 s
in a freezer bag mix a few tablespoons of olive oil any oil would work
1 packet of hidden valley ranch dry mix
mix those together then add potatoes and mix throughly.
i dump potatoes onto a foil lined bakjing sheet and bake at 350 for about 35-45 min depending on how crispy you like them we like them crispy.
i get 160 calories using 2 small red potatoes
ofcourse he eats the rest so just put what you use in a recipe the calories will vary by oil and size of potatoe
most of all enjoy this goes well with baked chicken and asparagus our favorite meal.0 -

stews are great... because the meat flavor will infuse into the vegetables.. and it will be filling so you don't have to eat a large amount... and it'll be healthy. I actually like soups better, the thinner broth fills you up but it still has all the flavor!0

bump...I have a very picky husband too. He doesn't like fruit, vegetables, beans, rice....just fast food, red meat, fried chicken, bacon, eggs, and potatoes. I gained 30lbs in a year eating the way he likes to, and now I get to lose it and he looks just as great as ever, grrr....lol0

I have made chili with a mix of turkey and beef...sounds odd but yes it is good and cuts down on the calories and fat from been. Also just ground turkey works good also.
Here is a great recipe for those that want a good burger with the taste with out the fat and cals...
Turkey Apple Burgers
1lb -Lean ground Turkey
1 Large egg beaten
1C Finely crushed soda crackers
2T Finely chopped onion
1 - Small crushed garlic
1 Red apple with peel diced
1T Chopped Parsley
3/4t Salt
1/2t Pepper
Combine all ingred in bowl and form into six patties. Broil 4" inches from heat for 10 min per side or grill or George Foreman or BBQ or med heat.
1 burger : 174 calories, 19g Protein, 4g Total Fat, 1.1 Sat Fat., 2mg Cholesterol, 552mg Sodium
Notes. I have made adjustments such as a smaller amount of oatmeal instead of crackers, and egg beaters instead of the fat for a whole egg and it does work. I have even left the egg out all together and still turns out delicious. it is a favorite of my husband Not working on a diet program. just another idea and choice for good dinner or lunch idea.0
