Garbonzo Beans/Chickpeas...What Can I Make?

For some reason, I love these little suckers. Besides hummus, what do you make with garbanzo beans (chickpeas)?

Have you made roasted chickpeas? OMG..Delish!
Rinse and dry can of chickpeas.
Throw them in a storage bag with a little olive oil.
Add seasoning (taco, ranch, cumin, whatever you feel like)
Place on cookie sheet.
Roast at 400 for a looong time! Mine usually take about 45 minutes to an hour. Shake around cookie sheet every 15 minutes. They are not done until they sound like rocks rolling around:)
This is my fave way to eat them besides hummus. My kids actually prefer them over popcorn now for movie night!
Edited to add that they don't keep well. So make what you plan on eating.0 -

Curry. Or mash them up and mix them with veggie mayo and veggies and make sandwiches with them. They're good roasted with a little olive oil and spices as wel!0

I love a garbanzo bean and garlic soup. There are a few variations if you search the internet. I generally roast some garlic, blend it with some garbanzo beans and vegetable stock. I leave about half of the beans chunky and blend 1/2 to smooth.
It is very warm, satisfying and yummy.0 -

no lie, made them 2 nights ago and they were good! I only baked until edges were just turning as I didn't want them hard and crunchy. Ok, so took a little getting used to the texture, but a really good substitute for my horrid sweet tooth!0 -

Falafel is probably one of my favorite things to make with chickpeas. Yes, this recipe is fried, but I can't find the baked version of this in my email right now. I'll come back and post it if/when I find it.

I've done them in a "stir fry" type dish with diced sweet potatos and various seasoning (we lean toward Indian seasoning in my house). Great combo.0

I found a couple more recipes in my recipe folder also. My wife and I recently went for a more vegetarian style diet, so I've been gathering these.. one of my favorite protein sources is chickpeas.

I love to make an easy lunch or side dish of leftover quinoa, re-heated in a frying pan with chickpeas and some kind of leafy green (kale, chard, spinach) chopped fine, and then with either lemon juice and herbs OR truffle oil and Parmesan cheese. Lots of protein and SO GOOD.0

I usually don't use all of the bread crumbs, just enough to bind it. I put this over a greek salad and use a vinegarette instead of the cucumber sauce to lightly dress it.0
