    Falafel is probably one of my favorite things to make with chickpeas. Yes, this recipe is fried, but I can't find the baked version of this in my email right now. I'll come back and post it if/when I find it.

    I've made them a few times and use them as a 'treat' day or something when I want something really good and vegetarian.

    I've done them in a "stir fry" type dish with diced sweet potatos and various seasoning (we lean toward Indian seasoning in my house). Great combo.

    Yum...I will definitely try this idea. I am new to cooking so I have a dumb question...what Indian seasonings are good? I love Indian food typically.

    Several of the recipes for Garbanzo Beans/Chickpeas I've found call for canned ones. I always make mine from the dried bag form to avoid the extra salt. The 'soak' is about two hours if you follow the directions on the back of the bag for the quick soak. They always work out just fine and even my 4 and 6 year old will eat them.

    I found a couple more recipes in my recipe folder also. My wife and I recently went for a more vegetarian style diet, so I've been gathering these.. one of my favorite protein sources is chickpeas.

    Yeah I make them from the bag too...something about the weird liquid in the canned version freaks me out! Thanks for sharing all of your recipes!!!

    I love to make an easy lunch or side dish of leftover quinoa, re-heated in a frying pan with chickpeas and some kind of leafy green (kale, chard, spinach) chopped fine, and then with either lemon juice and herbs OR truffle oil and Parmesan cheese. Lots of protein and SO GOOD.

    I usually don't use all of the bread crumbs, just enough to bind it. I put this over a greek salad and use a vinegarette instead of the cucumber sauce to lightly dress it.

    check out supercook.com and see what options they have available along with whatever else is in your pantry/fridge. I have to warn you that these are not always the healthiest of recipes but you can google a healthier version for just about anything these days. :) I do this for a lot of my recipes; I like good tasting food but need to stick to my diet restrictions. :)

    roasted chickpeas are the best....i saw that someone posted this already so I won't again...but try differnt spices...I love Indian food so cumin, curry, tumeric...anything that you can think of....they are so nice and crunchy - great for that need to chew! If you put them in an air tight Tupperware like container they will last a day or two but do start to get a bit soft. Still good tho'!:love:

    Haha - you had to go and ask me what seasonings. I have NO idea. Most of them are unlabeled in our pantry. But when my husband (who is Indian) comes home I'll ask him which versions we usually use.

    Have you made roasted chickpeas? OMG..Delish!

    Rinse and dry can of chickpeas.
    Throw them in a storage bag with a little olive oil.
    Add seasoning (taco, ranch, cumin, whatever you feel like)
    Place on cookie sheet.

    Roast at 400 for a looong time! Mine usually take about 45 minutes to an hour. Shake around cookie sheet every 15 minutes. They are not done until they sound like rocks rolling around:)

    This is my fave way to eat them besides hummus. My kids actually prefer them over popcorn now for movie night!

    Edited to add that they don't keep well. So make what you plan on eating.

    I never would've thought to roast them! I'm gonna try this. :smile:

    Red onion
    Cucumbers
    Cilantro Garlic
    White vinegar
    A touch of olive oil
    salt and pepper.. Sometimes i add some fesh Dill too..

    So yummy.. all my friends love this...

    Can of diced tomatoes, can of chickpeas (drained), diced onion, peppers, celery. Saute them all together with some spices - I like rosemary, a bit of red pepper flakes and cinnamon. Serve over brown rice. The combo of tomatoes and chickpeas is delish.
