Add them to any soup. You can also "mash" them to make a soup thicker instead of using flour or other thickening agents for creamier soups.

    This is pretty tasty:

    http://bowllicking.com/2012/01/12/rosemary-garlic-chickpea-soup/

I modified it by reducing the oil and browning a chopped up onion before adding the garlic and adding more chopped rosemary at the end. Mine ends up at around 320 calories/bowl, 15 g protein, 8 g fiber.

She (Chocolate covered Katie) has great recipes. She also has one for Chocolate cookie dough truffles, made with Garbanzo beans. They are quite good!

    Baked Falfel:
    Makes about 21 balls

1 15 ounce can garbanzo beans
    1 small onion, finely chopped
    2-3 garlic cloves, finely chopped
    3 tablespoons fresh parsley, chopped
    1 tablespoon fresh cilantro, chopped
    1 teaspoon lemon juice
    1 teaspoon olive oil
    1 teaspoon coriander
    1 teaspoon cumin
1/2 teaspoon dried red pepper flakes
    2 tablespoons flour
    1 teaspoon baking powder
    Salt and pepper to taste

Preheat oven to 375 degrees. Drain and rinse the garbanzo beans. Put in a medium sized bowl and smash with a fork. Add the rest of the ingredients and mix well. Form into small balls, about 1 1/2″ in diameter and slightly flatten. Place onto an oiled baking pan.

Bake for 15 minutes on each side, until nicely browned (since it’s baked, only the part actually touching the pan will be browned and crispy).

Serve with mini pita pockets, hummus, tahini sauce, tomatoes, lettuce and/or cucumber.

Have you made roasted chickpeas? OMG..Delish!

Rinse and dry can of chickpeas.
Throw them in a storage bag with a little olive oil.
Add seasoning (taco, ranch, cumin, whatever you feel like)
    Place on cookie sheet.

Roast at 400 for a looong time! Mine usually take about 45 minutes to an hour. Shake around cookie sheet every 15 minutes. They are not done until they sound like rocks rolling around:)

This is my fave way to eat them besides hummus. My kids actually prefer them over popcorn now for movie night!

Edited to add that they don't keep well. So make what you plan on eating.

    Love these. They are awesome!

I like to make chicken curry, and add chickpeas. I keep meaning to try mashed chickpeas, but I haven't yet.

I like a combo of beans, greens, bell peppers and sausage. You sautee the sausage (cut into bitesize pieces. Add some spices (I like thyme and chili flakes), then add water or chicken broth, your greens, and your chickpeas. Cover and cook for 2-10 minutes depending on the green. ANd I don't like my bell peppers cooked for long so I add them in the last minute or 2, but you can add them at any point. Serve. You can add rice or whatever too.

Oh and make an easy salad chickpeas, chopped bell peppers (and your other fave veggies), fresh herbs, lemon juice, olive oil. And you are done. :)

Well, my personal favorite is Chocolate Covered Katie's cookie dough dip. It's seriously addictive though, so proceed with caution...

I also LOVE falafel, and chickpeas are great in curries and salads. I made a really awesome lentil chickpea curry once with spinach and a sweet potato in the red thai sauce from Trader Joe's.

lay out on a greased pan (i use olive oil spray) (rinse them first) and then cover with italian seasoning. Bake for 20 minutes at 350. YUM! And so crunchy. You could also coat them with spaghetti sauce and cheese. Mmmm. I like them most of the time just with the italian seasoning, mixed in with steamed rice, tilapia, and dried seaweed. SO tasty.

no lie, made them 2 nights ago and they were good! I only baked until edges were just turning as I didn't want them hard and crunchy. Ok, so took a little getting used to the texture, but a really good substitute for my horrid sweet tooth!

THIS! Also she has a chocolate chip cookie dough dip from chickpeas. My kids LOOOOVE it!
