Slow Cooker Chicken Tortilla Soup

Made this yesterday and so many of my MFP friends wanted the recipe, I figured I'd post it here too
Hey girl! Here's that recipe
Ingredients:
3 raw boneless skinless chicken breasts
1 15 oz can diced tomatoes
1 10 oz can enchilada sauce
1 medium onion, chopped
1 4 oz can chopped green chile peppers
3 cloves garlic, minced
2 cups water
1 cup chicken broth
1 tbsp cumin
1 tbsp chili powder
1/4 tsp black pepper
1 bay leaf
1 10 oz package frozen corn
1 tbsp chopped cilantro
Directions:
Put everything in the crock pot on low for 6-8 hours. Shred the chicken with a fork and knife (falls apart super easily after that long in there), and that's it! You can add shredded cheese or rice to it too, if you want, and it's soooo good!
I added it to the MFP database (sans shredded cheese or rice, you'll have to add that in separately), so all the calorie count and everything is in there. Really low fat/low cal and filling

I added it into the database, but you can always tweak it by making it spicier/less spicy depending on which enchilada sauce you use or if you get hot, mild, or regular chiles. It's DEF a family favorite!!0

i haven't made this recipe before but I have cooked chicken in the crockpot and yes the chicken will be fully cooked... if your worried tho you can always boil it in some water before hand and then add to crockpot.

Sounds great! I am usually gone from home during the week for 10 hours. Have you cooked it that long? Worried about the chicken getting dry.
I've left it in there for about 8 hours and it was fine, then reduced it to "warm" for another couple hours. Chicken stays nice and tender in the soup
Oh, and the recipe makes about 8 servings. I always make a lot so I have leftovers!0 -

Crock Pot Chicken Tortilla Stew and it's 169 calories per serving (1 cup servings---I always have 1.5)
Couldn't decide if it was more of a soup or stew since it's so meaty0 -
