    I made this last weekend and having it tomorrow night for dinner. But I have a question....I just put it into the recipe builder thing to get the calories and I'm not coming up with 169 calories per serving. How many people is it supposed to serve? And how many ounces of chicken? I'm guessing this is where the discrepancy is.

    Made this yesterday and so many of my MFP friends wanted the recipe, I figured I'd post it here too :)

    Hey girl! Here's that recipe :)

    Ingredients:

    3 raw boneless skinless chicken breasts
    1 15 oz can diced tomatoes
    1 10 oz can enchilada sauce
    1 medium onion, chopped
    1 4 oz can chopped green chile peppers
    3 cloves garlic, minced
    2 cups water
    1 cup chicken broth
    1 tbsp cumin
    1 tbsp chili powder
    1/4 tsp black pepper
    1 bay leaf
    1 10 oz package frozen corn
    1 tbsp chopped cilantro

    Directions:

    Put everything in the crock pot on low for 6-8 hours. Shred the chicken with a fork and knife (falls apart super easily after that long in there), and that's it! You can add shredded cheese or rice to it too, if you want, and it's soooo good!

    I added it to the MFP database (sans shredded cheese or rice, you'll have to add that in separately), so all the calorie count and everything is in there. Really low fat/low cal and filling :)

    Yum, not sure where I'd get enchilada sauce in the UK though. Maybe I just haven't ever looked.

    I made this yesterday as well, added a package of williams taco seasoning, can of black beans, can of kidney beans, a can of hominy, jalapeno and rotel. didn't put the chicken stock, water or enchilada sauce in mine. it was delicious, hubby loved it too. low in calories....

    How do you add a recipe to the database? I do a lot of cooking and am always making up or changing recipes.

    So the chicken will be fully cooked just going in raw? Just wondering

    Yes! I even throw it in before it's thawed so it's not dry.

    You can make your own, just look up a recipe. Very simple actually. I hate that everything is canned but love how easy it is to store canned goods...Damn you canned food industry for making me so lazy!

    After 6 - 8 hours on a low heat, ofcourse the chicken will be cooked.
