yum, thanks! Just bought cottage cheese but don't like the texture on it's own, will try this!!

I agree...quite frankly, I think it's gross... But I use cottage cheese in my smoothies and what I do is blend it with a bit of almond milk before I add my fruit (usually banana and frozen strawberries)...all the good qualities of cottage cheese without the gross factor =)

Thank You,what a great way to get extra protein without using protein powder. I never heard of using it in smoothies before now.

Tried this the other day but as it was only for me i halved the ingredients (250g Cottage cheese
1 Egg and 4 mushrooms plus some finely chopped onion) this filled 2 small ramekins, put them in the middle of a pre-heated oven at gas mark 5 and baked for roughly 30/35 mins (forgot to look at the time i put them in ), they were lovely, big thanks to the OP

If you want a base for it, you can use lean ham slices and then add the mixture on top.

Hi, I made these but put them into muffin tins (it made 8) it was a bit fiddly because you had to spoon the mixture in but made really handy grab & go snacks.
Slimming world also did a variation - cook a pack of batchelors chicken & mushroom pasta & sauce (just with water, no milk), mix with cottage cheese & eggs, seasoning & herbs, put in a Pyrex dish & bake.....it was huge & very tasty, I haven't got time at the moment to work out calories, I'll try to make the time later :-)
