    I thought I'd mention this.......if you use Hood Calorie Countdown milk, it's 35 cals/cup with a better kick of protein! (6 g/cup as opposed to 0 g/cup for coconut milk)

    Speaking for where I live (near Orlando), the So Delicious brand is carried by my local Wal-Mart or for a dollar more per half gallon, Whole Foods. I've seen the one by Silk at Publix and at Whole Foods, and Whole Foods carries their own as well.

    Thanks for this idea! I made it with 1/2 cup almond milk, 1/2 cup water and a scoop of protein powder and it was great! Tasted like the pistachio ice cream I crave.
