    I've been really into watercress since I had it in a tofu dish a few weeks ago. I put it in my omelets now instead of spinach.

    roasted asparagus in garlic olive oil with crumbled bacon on top....

    grilled cauliflower in foil with garlic and mushrooms!

    Sweet potato with cottage cheese on it.....


    DAMN...now I want these...

    Mushrooms and avocado appear weekly on my plate. Usually multiple times in a week. Also LOVE asparagus!!

    I've always loved veggies and fruits besides beets, brussel sprouts, avacado and celery. I've tried beets baked in the oven and not too bad now. Still don't think that I like the others except, I am craving celery. I love it raw and chopped up in salad or with a little artichoke and spinach hummus (Sabra brand). I actually CRAVE it

    We are eating a lot of artichoke hearts in about every dish, spinach and mushrooms (fungus but for cooking we consider them a veggie).

    Also, I love black soy beans! Yummy. We have modified George Stella's bbq soy bean recipe and it tastes so good and gives me loads of protein and fiber without too many carbs to raise my blood glucose levels:)

    I LOVE veggies!!! :love: currently i have been eating alot of sweet potatoes, avacado and zuchinni... i put zuchinni in everything! i also love sugar snap peas.

    current cooked loves: broccoli and asparagus (steamed).

    Someone a few replies back posted about cooking radish- I'm just wondering how? I've always eaten them raw.

    Brussel sprouts are great!

    Also, KALE :) kale chips are yummy but I prefer it tossed with a little olive oil, lemon juice, craisins, and pine nuts. Delish!
