Asparagus - you can have a ton of it for very little calories and roasted or grilled it is delicious. Also red bell peppers, I load my wraps with grilled red bell peppers and onions (not so great for the breath) or make a sauce by processing 2tsp of light mayo with a whole grilled red bell and an ounce of sliced almonds (delicious for grill chicken wraps).0

We seem to be eating a lot of red cabbage, leeks, and bok choy sauteed in coconut oil.0

right now it is sweet potatoes but i also love artichokes and squash.....ok broccoli and cauliflower also. actually there are only a few vegetables that i dont love0

It would be easier to say what vegetable I don't like. I don't like eggplant, cooked carrots (I'm fine with raw) or tofu that isn't deep fried. All other veggies, I'm down with. Especially mushrooms.0

I have a few:
* Mushrooms;
* Eggplant (especially grilled);
* Tomatos (because theyre a great base for sauces/curries/pastas ect); and
* KALE! Im obsessed at the moment.0 -
Sweet potato for me too. I roasted up a big old sweet potato earlier in the week, ate half of it with dinner and snacked on the rest over the next few days.
Snow peas are my other favourite - lightly steamed or just raw, they make a great snack.0 -
There's a million and one vegetables which I really don't like. I will try anything at least once though. My all time favourite has to be sweetcorn. I've recently discovered eddamme beans and I love mushrooms too0

mixture of zucchini and summer squash, sauteed with garlic and sprinkled with asiago cheese and walnuts (from South Beach cook book). Yum!0

I love (and always have) broccoli!!
A veg I used to hate but now love is sprouts, particularly with gravy and mint sauce, yum!0 -

Brussel sprouts! I saute them in olive oil with salt and pepper and they are amazing! A close second would be asparagus!
Totally agree! After the late spring eating loads of asparagus but really love those pan roasted brussels sprouts in the winter!0 -
