I like to mix them up with a little salsa and brown rice.

I like to mash them up, mix them with a few other things for texture and flavor and make homemade veggie burgers with them.0

I make bean salads with black beans a lot! Mixed with raw chopped onion, pepper, tomato, cucumber, kalamata olives, sometimes artichoke hearts, some fresh lemon and lemon peel, cilantro, and I eat it cold as lunch! I'll also take that same bean salad and use it on top of an actual salad with grilled chicken or shrimp, or on a burrito with ground turkey. Its tasty, healthy, and versitle!0

This thread got me in the mood for black beans. I used chopped boneless skinless chicken breast baked in salsa, microwaved the drained black beans, cooked brown rice, mixed it all together (including a few tblsp of the salsa), sprinkled with sharp cheddar popped in the microwave long enough to melt and then added fat free sour cream. OH so very yummy! mmmm mmmm had it for breakfast too!0

Put them on a "mexican" or taco salad with corn...so yummy.
Add them to taco meat to give it a little more body

Love em! I put them on a tortilla with cilantro lime rice (easy to make as well) --- I will also add "fajita" seasoned chicken, peppers, etc... but just the beans and rice is good. I also saw a REALLY good lookin' recipe for Black bean Burgers on skinnytaste.com - have not made them yet however.
The only thing I don't like, is don't forget about them in the fridge -- it doesn't take long before they start to stink!0 -

I have a simpler version of this (sorry if this has been shared already). You can add spice as you like, I like mine mild but you can do tomatoes with spices or add a can of chilis
1 can black beans (low sodium)
1 can petite dice tomatoes (no added salt)
1 can corn (no added salt)
1.5 pounds chicken breast (boneless/skinless)
1 tbsp Mrs. Dash Southwest seasoning
Put all the ingredients in the crockpot and cook... I do on low for 8 hours
After cooking, shred chicken and let sit for just a little longer so the juices seep in everywhere.
Enjoy!!

I mix them in with meat and seasoning for tacos, or on salads (especially southwest type salads), or over yellow rice, or in soup, or if I'm too lazy for that and hungry I just open a can drain and rinse and eat them. I do like some of these suggestions though so I'll be trying them some new tasty ways :happy:0

Black Bean and Corn Salad
1 can of black beans
1 can of sweet corn
I can of Rotel with lime juice and cilantro
Fresh chopped Cilantro, salt, pepper, cumin to taste
1 avocado diced
Squeeze 2 medium limes0 -

I love black beans.
Husband made a great Cuban sofrito-black beans-rice dish Monday night that we've been eating all week. We had some leftover slaw from a cookout Sunday and I added lime juice and colantro to that to serve on the side.

I put like 1/2 cup of cold black beans on a baked sweet potato.

Can of rotel. Can of black beans. Blend. And instant soup.0

Make chicken burritoes!!! Along with some brown rice, salsa, and your choice of sauce. (I typically skip the cheese :-( )0

Rinse, soak overnight
Drain, rinse, cover with water, bring to boil & boil for 15 - 20 minutes
Rinse again (a few times) cover with water & bring to boil again
Simmer until tender (depends on where you live) seems like a few hours for me
- the point of the repeated rinsing & boiling makes for gas-free beans!
While the beans are simmering, I add garlic (lots, maybe 3 cloves), ground cayenne pepper; sometimes other seasonings depending on my mood.
When done to my preference, I drain the water and usually serve over brown rice and if I have it add a dollop of sour cream & some chopped tomatoes.
- Remember NOT to add salt until the beans are done cooking (this goes for all beans & legumes) as they don't get any softer after you add salt.

Saute some onion, garlic, add the beans, salt, pepper, maybe a little cumin. Eat with some chicken and rice.
This, but I can also substitute chicken for eggs. Makes for a delicious and satisfying meal!0 -

Sorry if repeat but I add to rice with salsa, cumin and tomatoes (chili powder if you like). Yummy - then I can portion out and do what I want with it rather mix in with scrambled egg, make burrito, add cheese and sour cream with chunked chicken, eat as a side by itself, etc. I also take black beans by themselves and add directly to eggs with sourcream and a little bit of cheese and make a breakfast burrito with it. Just be careful with the can. I buy the low sodium and find that they taste just as good.0

I love black beans!! Yum i do:
Turkey and black bean chili (the veggies i add are celery, carrots, peas,and lil bit of corn) Its super delicicious and filling!!
Mashed black beans as mexican refrito (just add chopped onions)
Seasoned black beans as salad toppings!!0 -

I found this on a can of black beans and it's amazing.
Ingredients:
Black Beans, 1 can
1/4 cup Red onion, diced
1/4 cup Fresh or pickled jalapeno, diced
1 cup Corn (optional)
1 tbl chopped fresh cilantro
2 tbl balsamic vinegar
salt and pepper
Drain gook out of can of black beans. Dump all ingredients into small pot. Cook on low/medium until all ingredients are warmed through. It's a yummy side dish for chicken.
If you cook it longer it will be more mushy (you can also mash it) which is good to add to burritos or eat as a dip. Kind of tastes like a spicy refried bean dip.0
