    This is in my crockpot waiting for me to get off work. I am really looking forward to dinner tonight!!!!

    Crock Pot Turkey Fajitas
    adapted from Stacy Makes Cents www.stacymakescents.com

    Ingredients
    1 yellow onion sliced
    2 green peppers sliced
    1 red pepper sliced
    1 yellow pepper sliced
    1 orange pepper sliced
    14 oz chicken broth
    1 lb turkey breast cutlets sliced
    1 packet fajita seasoning
    ground cumin


    Directions
    Combine sliced veggies on the bottom of a greased crockport. Lay meat on top of veggies. Pour chicken broth over the top. Cover the top of the meat/ veggies with cumin and fajita seasoning. Cover and cook on low for 8-10 hours (or high for 4-6 hours). When done, serve with a rice or quinoa side dish or on tortillas with your choice of fixings.

    Low Carb Pork roast

    1 pork butt roast

    Ground pepper

    Basalmic Vinegar

    Soy Sauce

    Minced Garlic

    Splash soy sauce, vinegar, and garlic in until pot until bottom is covered. Add pepper. Put in pork. Splash basalmic vinegar on it, cover, cook on low ~5 hours. Depending on size of cut and size of crockpot.

    Cream Cheese Chicken Chili

    1 can black beans
    1 can corn, undrained
    1 can Rotel, undrained
    1 package ranch dressing mix
    1 tsp cumin
    1 Tbsp chili powder
    1 tsp onion powder
    1 8 oz package 1/3 less fat cream cheese
    2 chicken breasts (I sometimes use 3)

    Drain and rinse black beans. Place chicken at bottom of pot, then pour out whole can of corn (undrained), rotel, and black beans. Top with seasonings and ranch mix. Stir together. Place cream cheese on top. Cover with lid and cook on low for 6-8 hours. Stir cream cheese into chili. Use 2 forks to shred chicken. Stir together and serve.

    This is soooo easy, and so good! Warms up great for leftovers. If you want to cut some calories, don't use the whole package of cream cheese. I've tried it with 1/2 and it's just as good! Also, I like to use a spoonful of fage greek yogurt and shredded cheese to garnish. Yum.

    Wow these all look incredible!

    One of my fave's is - 2-2.5lbs of boneless skinless chicken thighs & breast, a jar of salsa, and packet of reduced sodium taco mix. Cook on low for 6-8 hours. Shred the chicken and add a can of drained pinto beans (low sodium). Kick the crockpot to high for 20 mins to heat the beans. Serve over a tostada or in a tortilla. I chop up avocado, lettuce, and tomato for mine with a small dollop of sour cream. Yumm-o! And super filling!

    I don't eat pork, but my mom takes pork chops or loins and puts in in the crockpot with sliced onion, garlic, and a can of mushroom soup. Cook on low for about 8 hours...add pepper to taste, and serve over rice. She also usually added some crushed french's fried onions on top.

    In my crock pot today is 2.5 lbs chicken tenders, one can of pineapple chunks in juice, and about 1/4 cup of bbq sauce.
    Will have this for dinner tonight- either in wraps or over rice, depending on which one I want :)

    Yesterday I made this: (which is similar to many of the other recipes I have seen on here)

    Fiesta Black Bean Chicken
    2 Frozen Chicken Breasts
    2 Cans Black Beans, Rinsed
    1 can 14.75 oz stewed tomatoes, blended with taco and ranch seasoning)
    1 can tomato sauce (lo salt)
    Taco seasoning (add to the stewed tomatoes)
    Ranch Pack (add to stewed tomatoes)

    Combine all in a crock pot (add the chicken last)
    Cook on low for 6-8 hours
    Oh, so Good!

    I had it last night with part of an avocado, and it was delicious! (brought leftovers today and cannot wait for lunch!)

  • serving for 8

    4 boneless, skinless chicken breast (organic is better)
    1 can fat free cream of mushroom soup
    1 16oz fat free or light sour cream
    1 packet of onion soup mix

    Put it all in the slow cooker on low for about 7 hrs. When done shred the chicken and serve over brown rice. One serving is about 92 calories with out the rice.

    I'm going to be trying out a Sweet and Sour Meatball recipe for the crockpot, this weekend. If it's good, I'll post the recipe =)

    I just tried it...I used the Heinz chili sauce, and welch's grape jelly with frozen turkey meat balls....I have to say that it wasnt the best thing Ive ever made, it tasted really blah, boring, and not full of flavor. Maybe yours will turn out different. Let me know! :) Good luck :))))
