    I slice (and sometimes shred) them and layer them in a pan with tomato sauce and some low fat cheese. Then I bake until it's all cooked. :)

    That sounds soooo good...and I seem to have an (almost) endless supply in the garden! Thanks for the idea. :smile:

    Baked Zucchini Fries..
    May family loves fried zucchini. This is a much lighter and very tasty atlernative.

    Julianne the Zucchini (like french fries)
    lighly sprinkle with garlic and paparika ( or I used seasoning salt)
    dip in beaten egg & water or just egg whites
    then in a shallow pan mix parmesan cheese, Panko style breadcrumbs, and a little more seasonings
    coat zucchini with breadcrumb mixture
    Bake in 425 degree oven for 10 minutes, turn them over and bake 10 more minutes

    They will be lightly browned and crispy and so tasty, I served them with a marinara type sauce

    OH YUMMY AND THANK YOU! I never thought of this and I am a fried zucchini freak!!

    Zucchini Tots



    Ingredients:

    Squash - Zucchini, includes skin, raw, 1 cup, chopped
    Onions - Raw, 1/4 cup, chopped
    Parmesean Cheese Grated - 1/4 cup
    Panko Bread Crumbs- 1/4 cup
    Eggs - Whole, raw, 1 large

    I put the onion and zucchini in the food processor so it's finely chopped. Mix everything together. Spoon by the teaspoonful into mini muffin tin (GREASED) Pat down with back of spoon. 400 degree oven for 20 minutes or until you notice them getting a beautiful brown crust on the edges. Makes 12 tots per tin.

    These are awesome and I would like to reiterate the GREASED part.

    I saw this on Pinterest, have not made it yet though. I would make a few changes to make it calorie friendly, but it sounds oh so good


    Feta & Parmesan Zucchini Bake
    (recipe adapted from Kalyn's Kitchen)
    6-7 medium zucchini or yellow summer squash
    2 Tb canola oil
    2 Tb minced garlic
    2 tsp dried thyme
    4 eggs
    2/3 C light sour cream
    1 C crumbled feta cheese
    1/2 C fresh parmesan cheese
    2 Tb lemon juice
    salt and pepper

    1. Preheat oven to 375 degrees and spray a large casserole dish with nonstick spray.
    2. Slice the squash into 1/4" slices. If they are larger squash, cut them down the middle before slicing. Heat the oil in a large non-stick frying pan. Add the squash, garlic and thyme. Saute and stir just until the squash is starting to soften slightly. Don't cook too long or it will be mushy after it bakes in the oven. Remove from the heat.
    3. Beat together the eggs, sour cream, cheeses and lemon juice in a medium sized bowl. Place half of the squash into the bottom of the casserole. Sprinkle on some salt and pepper (remember the cheeses are salty!) then spread 1/2 of the egg mixture over the top. Repeat with remaining squash and egg mixture.
    4. Bake for 40-45 minutes, until the mixture is bubbling and slightly

    Zucchini Pancakes

    2 cups Zucchini, shredded
    2 Eggs
    1/2 cup of flour
    1 teaspoon of baking powder
    1/4 cup of Parmesan cheese
    1/2 small or medium onion, grated
    Lots black pepper, freshly
    1 teaspoon of dill
    1/2 teaspoon of salt
    Sour cream

    In a heated skillet filmed with oil, drop mixture by spoonful, 3 at a time. You may need to spread them out a little with your spoon. When golden, turn and flatten down a bit, if they rise. The smell of the dill, onion, and Parmesan cheese is wonderful!!

    I just made a delicious zucchini recipe last night:

    Pizza Zucchini Casserole

    4 cups shredded zucchini
    2 eggs
    2 Tbls parmesean cheese
    2 oz. shredded mozzarella

    Mix above. Spread in 9x13 casserole sprayed with cooking spray. Bake at 400 for 20 minutes

    While the above is cooking, brown 1 pound ground meat. Add 1 medium onion. cook till tender. Add 2 cups spaghetti sauce, 1 green bell pepper, 1 tbls Italian seasoning. Pour onto zucchini crust. Cover with 4 oz. mozzarella cheese. Continue baking 20 minutes or until cheese is bubbly and brown.
    Let cool 2 minutes before slicing.

    Yum!

    You can tweek the recipe to make it suitable for you. I added mushrooms and didn't use as much ground meat. You can also add pepperoni or whatever else you like on your pizza. This has around 330 calories for 1/8 of the pan. My kids LOVED it!
