    Crock Pot Potato Soup
    Nutrition Info
    • Calories: 258.2
    • Fat: 1.3g
    • Carbohydrates: 54.9g

    Ingredients
    6 potatoes, peeled and cubed (approx. 1/2 inch cubes)
    3 large carrots, sliced
    3 celery stalks, sliced
    1/2 cup chopped onion
    1-3 garlic cloves, crushed (depends on your taste)
    2 cups vegetable or chicken stock
    4 cups water
    1/2 cup evaporated milk (skim or 2%)

    To taste:
    salt
    pepper
    parsely flakes
    corriander
    ancho chile powder

    Directions
    In a crockpot, add potatoes, carrots, celery, onion, garlic, stock, and water. Cook on low for 6-8 hours or high for up to 4 hours.

    Add evaporated milk 40 minutes before serving if cooking low, or 30 minutes before serving if cooking on high. Add spices at this time and allow to simmer for the time needed.

    If you want a smoother, creamier soup, *before adding milk* add half of the soup to a blender and blend until smooth and add back into crockpot. Add milk and seasonings as directed above.

    Serve with fresh bread and a side salad.

    crock pot pulled sweet and sour chicken

    Ingredients
    1lb boneless skinless chicken
    1/2 bottle kratf free catalina salad dressing (bottle being 16 fl.oz)
    1/2 jar Smuckers sugar free apricot preserves (jar being 12.75oz)
    2 1/2 c. cooked brown rice
    Directions
    Put chicken, salad dressing and preserves in the crock pot. Cook for atleast 4 hours. But, it does best on low if you can.

    30 minutes before you are ready to eat pull out the chicken and pull it apart. After it's pulled put it back in the crock pot.

    In the mean time, make your rice as directed on the package.

    Serve chicken over rice.

    1 can - Campbell's Healthy Request Cream of Chicken Soup
    1 package - Mixed Vegetables, frozen
    3 frozen Chicken Breast
    1/2 cup of Chicken Broth 99% Fat Free
    2 potatoes cut in cubes
    Directions
    Add all ingredients in crock pot with chicken on the bottom. Cook on high for 3-5 hours.

    8 cups diced potatoes
    1/3 cup onion, chopped
    3 (14 oz) cans of low sodium chicken broth
    1 can cream of chicken soup, fat free
    1 (8 oz) pkg of fat free cream cheese, cubed
    6 tbsp Oscar Mayer Real Bacon Bits
    Chives (optional, not included in my recipe)
    Directions
    Combine first four ingredients in crock pot.
    Cover and cook on low 8 hours or until potatoes are tender.
    Add cream cheese and blend.
    Top with bacon before serving.

    Simple Beef Broccoli Stir Fry (crock pot/pan)

    Ingredients
    1 lb lean stew meat
    2 c chopped fresh broccoli
    1/2 c sliced fresh carrots
    2 tbs minced garlic
    2 tbs low sodium soy sauce
    2 tbs flour
    2-3 c water
    Directions
    brown meat in pan with garlic in skillet or wok.
    add soy sauce and water, bring to boil. reduce heat to very low and cover. (I like to simmer this in the crock pot for about 2 hours so meat is very tender then put back in skillet or wok--keep an eye on water level)
    add flour to thicken sauce.
    add carrots, cook for 3 mins.
    add broccoli cook for 5 minutes.

    can be served over rice (not included in nutrition info)

    Bow Tie Lasagna (Crock Pot Recipe)

    Ingredients
    3 3/4 cups uncooked bow-tie pasta
    1 package Morninstar Farms Tomato and Basil Pizza Burger
    2 cups Part-Skim Mozzarella Cheese
    1 16 oz container Fat-Free Cottage Cheese
    1 26 oz jar Fat-Free spaghetti sauce
    1 cup water
    1/4 tsp lite salt
    1/4 tsp pepper
    1 tsp italian seasoning
    2 Tbsp dried parsley
    Directions
    Cook pasta according to package directions. Drain and place in crock-pot.

    Cube Morningstar Farms Tomato and Basil Pizza Burgers and place in crock-pot. Add cheese, spaghetti sauce, water, salt, pepper and italian seasoning. Stir to combine.

    Cook on low about 3 hours or until heated through. Stir in parsley and serve hot.

    Makes 6 1 1/3 cup servings.

    1.5 lbs boneless skinless chicken breast
    3 10.75 oz cans 98% Fat Free Cream of Chicken (Campbell's)
    1 10.75 oz can 98% Fat Free Broccoli Cheese (Campbell's)
    4 Cups mixed veggies (I used Broccoli, Cauliflower, Baby Carrot, Yellow Carrot blend from Costco, Kirkland Brand)
    Directions
    Cube chicken to "bite size". Add all ingredients to crock pot or slow cooker. Cook for 4 hours on high. Makes 8 - 1 cup servings.

    I usually sprinkle some fat free cheese on top, not included on the calorie count.

    Weight Watchers Taco Soup
    • Time 75 minutes
    • Serves 12
    Ingredients

    • 1 lb. ground turkey or lean beef
    • 1 large onion, chopped
    • 1 (1 oz.) package Hidden Valley Ranch Dressing Mix
    • 1 (1 oz) package Taco Seasoning Mix
    • 1 (16 oz.) can pinto beans
    • 1 (16 oz) can chili beans (either hot or regular)
    • 1 (16 oz) can whole kernel corn
    • 1 (8 oz) can Mexican-style tomatoes
    • 1 (8 oz) can diced tomatoes (any flavor)
    How to make it
    • Brown meat & onions and drain.
    • Mix Ranch & Taco seasonings into meat.
    • Add rest of ingredients, undrained to mixture.
    • Simmer 1 hour.
    • 2 Weight Watchers points per cup.

    Crock Pot Chicken Stroganoff
    • Time 420 minutes
    • Serves 5
    Ingredients

    • 6 boneless skinless chicken breasts
    • 1 (16 ounce) container sour cream (fat-free is fine)
    • 1 (1 1/4 ounce) envelope Lipton Onion Soup Mix (dry)
    • 1 (10 1/2 ounce) can cream of chicken soup or cream of mushroom soup (98% fat free can be used)
    How to make it

    • Place chicken in bottom of crock pot.
    • Combine soup, sour cream and onion soup mix and pour over chicken.
    • Cook on low for 7 hours.
    • Serve over cooked rice or noodles.

    Mexican Crockpot Creamy Chicken

    Ingredients:
    1lb. Boneless Skinless Chicken Breasts (I put mine in frozen)
    1/2 cup of salsa
    1 bag frozen sweet corn
    1 can of black beans, drained and rinsed
    1 can of Rotel Tomatoes with Green Chilies
    Chili Powder
    S&P
    1/2 block of cream cheese (I use 1/3 fat free)
    1 small onion diced

    Directions:
    Put chicken in crock pot and cover with all ingredients except for cream cheese.
    Add in chili powder and S & P to taste. I sprinkle it all on the top and add more later if needed.
    Cook for 3-4 hours on high, 7-8 hours on low.
    Shred the chicken and mix it all in along with the cream cheese until melted. Let cook for another 15-20 minutes until heated through.
    Serve over rice or in tortillas as tacos/burritos.
    I usually top it with some shredded lettuce and diced tomatoes.

    Makes 6 Servings.

    2 cups Steel Cut Oats
    1 - 15 oz can pumpkin
    3 1/2 cups fat free milk
    3 1/2 cups water
    1 Tablespoon vanilla
    1 Tablespoon pumpkin pie spice
    1/4 cup Splenda
    Directions
    Combine all ingredients in slow cooker (I used 5 quart and it worked perfectly). Cook on low 4-6 hours.

    Makes 8 - 1 cup servings.

    Chicken crockpot tacos:

    3 - 4 chicken breasts (this makes tons)
    One to two packs of chipotle ortego taco seasonings
    Mushrooms
    Onions
    Black olives
    Half can of rotel
    1 ½ cups water

    Slice all your onions/mushrooms and put in bottom of crockpot. Add black olive to taste. Put ck on top. Stir together water and taco seasonings. Pour over ck and veggies. Add rotel on top. Cover and cook 7-8 or so hours on low. (works on high 4-6 as well). About an hour before they are done uncover them and shred the chicken with forks and stir together. They will absorb the liquid.
    These come out so so tender and juicy and delicious
