Any one reccomend a great crockpot recipe?

    I make "chicken burrito soup" in the crockpot, it's best served with sour cream, cheese, and tortillas, BUT i've been eating it without all the high-calorie toppings and it's still very tasty:

    1 lb meat - I'm on a budget, so I usually use skinless chicken thighs
    1 medium onion, diced
    1 large can diced tomatoes
    1 can corn, drained
    1 can black beans, drained
    1/2 cup dry rice
    3 cloves garlic or garlic powder
    1 tbsp cumin
    1 tbsp chili powder
    1 chipotle pepper, chopped (you can omit for the kiddies)

    It's a great fridge-cleaning type recipe, you can add whatever vegetables you have on hand or swap the protein (it's great with pork), and the counts on it are great for me. For 1/6 of the recipe:

    269 cals
    3 g fat
    22 mg cholesterol
    422 mg sodium
    44 g carbs
    7 g fiber
    18 g protein
