check out www.skinnytaste.com I am currently making the pork carnitas slow cooker recipe and they are fabulous. My family loves it. I have also made the chicken pot pie soup and again it was good. She has easy to follow low fat recipes. Good luck!0

1 lb stew meat (beef)
1/4 c beef broth
4 c broccoli (1 frozen bag)
1 packet of onion soup mix.
Put everything in except the broccoli (unless it's fresh, in which case, toss it in too), cook 4-6 hours, add frozen broccoli 30 minutes before finished. Enjoy with noodles or over rice or quinoa.0 -
Chicken taco stew.
2 -3 cans of low sodium diced tomatoes
1- can of black beans
frozen corn (however much or little you like.
1 can of green chilis
1 - packet of taco seasoning
2-3 chicken breasts
put everything in the crockpot minus the chicken. Do not drain the cans. Once everything has been added and is mixed place the chicken on top of the mixture cover and I set mine for 7 hours on low. Before serving shred the chicken and mix. Serve with lowfat cheese, light sour cream or tortillas. Or eat by itself my whole family loves it including my son (he is 8). The amount that this makes will usually feed my family of 3 dinner twice and lunch for hubby a couple of days. So if you have a larger family just add more.0 -
3 chicken breasts, 1 c salsa, 1 packet taco seasoning. Cook til done, then shred the chicken with forks and roll up in tortillas with some cheese and sour cream if you like.0

Saturday night I put about a tablespoon of salt into a cup of apple cider and marinated pork chops in the brine overnight then Sunday morning before my Zumba class I put it all in the crock pot with potatoes and carrots and cored but not peeled apples and set it to low. Then I went about my whole day around 2 I checked the temp of the meat and turned up the crock pot to high. We ate around 6 and the pork had the flavor of apples and was very tender. Keep the pork at the bottom so that it stays in the liquid. It was delicious.
Sorry it's not a real recipe, it was just me experimenting!

Teriyaki chicken:
3 chicken breasts diced
1 large can pineapple chunks and juice,
1 onion chopped into chunks
1/2 bag baby carrots
3/4 c favorite teriyaki sauce (watch the sodium!)
1 green pepper diced

Yep, I use mine at least once a week!
-4 chicken breasts, 1 packet taco seasoning and 1 jar salsa in crockpot on high for 4 hours makes the best taco/fajita chicken ever! You can put it in tacos, burritos, on salads or my favorite.... Quesadillas!
-Do the same but with 1 jar of hot sauce (any kind, we use franks) and 1 packet ranch seasoning for yummy buffalo chicken. We eat these in lettuce cups!
-Breakfast bake with layered hash browns, bacon or ground turkey, green peppers, onions, cheese...pretty much anything you want. Scramble 8-12 eggs with some milk and pour over layers. Great for when we have company! Cook overnight on low.
-I also do smoked sausage (2 sets of 2), a bag of frozen green beans or broccoli, around 5 diced red potatoes and throw them in together raw. It's not super healthy but add a can of cheddar soup and a can of celery. Top with shredded cheese and bake on high for 3 hours.
So many ways to change these up. Different veggies, lighter soup, egg substitutes or skim milk. Whatever works!0 -

4 -5 boneless chicken breasts
1 (15 1/2 ounce) can black beans
1 (15 ounce) can corn
1 (15 ounce) jar salsa, any kind
1 (8 ounce) package cream cheese
Directions:
1. Take 4-5 frozen, yes, frozen, boneless chicken breasts put into crock pot.
2. Add 1 can of black beans, drained, 1 jar of salsa, 1 can of corn drained.
3. Keep in crock pot on high for about 4-5 hours or until chicken is cooked.
4. Add 1 package of cream cheese (just throw it on top!) and let sit for about 1/2 hour.

Buffalo Ranch Chicken
1 lb Chicken breast
1/2 bottle Franks Hot Sauce (NO CALORIES)
1 package Hidden Valley Ranch (the powder)
Put the chicken in the crockpot, then Franks Sauce, and sprinkle the ranch over it....not sure how long because we all put it on for different times. Since I am gone all day I put it on low (10hours)
I have made wraps out of it and topeed salads....it is sooooooooo EASY, low cal, and healthy
I made it for my entire office one day...everyone loved it0 -

I just throw in a whole chicken (breast down) Seasoning under the skin with fresh rosemary, garlic cloves & a lil salt & pepper. Slice up 1 orange and 1 lemon & 1 large onion. Take 1/2 the lemon, orange & onion and put in the cavity, the remaining lines the bottom of the crock with a couple slices for the top. Sometimes I will add a lil chicken broth or water to the bottom for some extra moisture. Cook on low all day (8-10hrs) Yum!0 -

I usually sprinkle some fat free cheese on top, not included on the calorie count.

Pork Chops with Cream of Mushroom in Crock Pot

Brown chops in frying pan.

Add browned chops to crock pot.
Add 1 can of cream of mushroom soup to crock pot.
Cook on low for 7 - 8 hrs or high for 5 - 6 hrs
Serves 4 - 1 chop each and a 1/4 of the gravy.
Great served over rice, noodles, or mashed potatoes (not added to nutritional count)

Simple Beef Broccoli Stir Fry (crock pot/pan)

add flour to thicken sauce.
add carrots, cook for 3 mins.
add broccoli cook for 5 minutes.
can be served over rice (not included in nutrition info)

4 lbs beef roast, sirloin tips, or stew meat, (whatever is on sale), cubed
1 Tbsp Kitchen Bouquet to darken meat (optional)
1/2 cup flour (More than this makes it too thick)
2 tsp salt
1/4 tsp black pepper
8 oz can sliced mushrooms, drained
10.5 oz can Beef Consomme
1 tsp Worcestershire sauce
1 Tbsp tomato paste or ketchup
Serve over wide egg noodles, rice, or mashed potatoes.
Directions
Stir Kitchen Bouquet into cubed meat.
Add flour, salt, and pepper and toss meat to coat thoroughly.
Stir in drained mushrooms, beef consomme, Worcestershire sauce and tomato paste or ketchup.
Put in Crock Pot; cover and cook on LOW setting for 8-12 hours. (The longer the better.)
Nutritional Info is for 1-cup serving of Beef Tips.

Crock Pot Roast Chicken

1 whole chicken 3-5lbs (see what will fit in your pot)
1 cup water or low sodium-low fat chicken stock
2 tsp herb de province
1 clove garlic minced

1/2 - 1 tsp sweet paprika (enough for breast of chicken)
Directions
Place sliced onion in bottom of pot. Skin chicken the best you can, removing any fat you can see, then place on top of onions. Pour water/stock over chicken. Sprinkle garlic, herbs and paprika over top of chicken. Cook on low for 4-8 hours, chicken is done when leg pulls away smoothly.
This chicken will be pale so some men don't like the color, that is why I use the Paprika to give it a little color.
(Crock pot disclamer: older crock pots will take 6-8 hours newer ones can take 4-6 hours to cook)

Put chicken, salad dressing and preserves in the crock pot. Cook for atleast 4 hours. But, it does best on low if you can.
30 minutes before you are ready to eat pull out the chicken and pull it apart. After it's pulled put it back in the crock pot.
In the mean time, make your rice as directed on the package.
Serve chicken over rice.

chicken and dumplings
2-3 chicken breasts
1 can of low sodium and low fat cream of chicken soup
baby carrots ( however much you like)
celery (however much you like)
onion ( to your taste)
2 tbs margarine
8oz reduced fat pillsbury biscuits
add soup carrots, celery, onion and margarine to crock pot it only needs to be in for 6 hours, but on my crockpot if I want to cook on low I have to set it for 7hrs or more and you want to cook it on low. 30 minutes before serving shred the chicken and open the biscuits and tear off into bite size pieces in crock pot. Cook for 30 minutes or until dough is no longer raw. This made enough for 4 servings if you need more add another can of soup and but the 16oz container of biscuits and load up on veggies.0 -
