    Beef Stroganoff

    1 ½ pounds beef, trimmed
    1 cup chopped onions
    1 tbl Dijon mustard
    2 tsp dried parsley
    ½ tsp salt
    ½ tsp dill-dried
    ¼ tsp pepper
    1 clove garlic minced
    ½ cup all purpose flour
    1 can fat free beef broth
    ¾ cup low-fat sour cream
    6 cups egg noodles cooked

    Trim fat from steak. Wrap steak in heavy duty plastic wrap; freeze 30 minutes. Unwrap steak;cut steak diagonally across into 1/8 inch thick slices. Place steak, onion and next 6 ingredients in a 3 quart crock pot. Combine flour and broth in a bowl; stir with a whisk until blended.

    Add broth mixture to cooker; stir well. Cover; cook on low heat setting for 8 hours or on high 4 hours or until tender. Turn cooker off; remove lid. Let stand 10 minutes. Stir in sour cream. Serve stroganoff over noodles.

    Per serving 436 calories; 8g fat; 38 g protein; 53g carbohydrate; 133 mg cholesterol 409 mg sodium. 9 weight watcher points

    Made this for the guys on the fire department the last time I had to cook- there was none left to take home. I also made it for my husband (without the olives and mushrooms)- he requested that I make it more. He is really picky about what he eats, so I know that he really likes it.


    *********CHICKEN CACCIATORE
    3 to 4 boneless, skinless chicken breast
    1 jar spaghetti sauce
    1 sm. can sliced olives
    1 sm. onion, chopped
    2 each celery stock, sliced
    1 c. mushrooms, slices
    1 c. carrots (optional) or any vegetable desired
    1 pkg. macaroni (shells, elbow, etc.)
    Cut chicken in bite size pieces. In crock pot, combine chicken, spaghetti sauce, olives, onion, celery, mushrooms and carrots. Cook on low 6 to 7 hours or high 3 to 4 hours. Cook macaroni. Place macaroni in bowl, spoon Chicken Cacciatore over. Great with french bread and a salad.

    Havent made these 2 yet but really want to try them!

    CROCK POT GOULASH

    4-5 potatoes, peeled & chopped in bottom of crock pot
    1 med. onion, chopped
    1-2 sliced carrots
    Corn
    Peas
    1 lb. hamburger
    Salt & pepper
    1 can tomato soup

    Starting with potatoes layer vegetables in crock pot. (You may use frozen vegetables but you will need to add about 1/2 cup water.) Place raw hamburger on top of vegetables and top with the tomato soup. Cook on high 4-5 hours or low 6-8 hours.


    Crock pot Breakfast Casserole

    Makes 10-12 servings

    1 (2 pound) package frozen shredded hash brown potatoes
    1 pound diced cooked ham
    1 onion, diced
    1 green bell pepper, seeded and diced
    1 1/2 cups shredded Cheddar cheese
    12 eggs
    1 cup milk
    salt and pepper to taste ( I used 1/2 tablespoon of seasoning salt and pepper)
    Directions
    1.Lightly grease a 4 quart or larger slow cooker. Place 1/3 of the hash brown potatoes in a layer on the bottom. Layer 1/3 of the ham, onion, green pepper, and Cheddar cheese. Repeat layers two more times. In a large bowl, whisk together eggs and milk, and season with salt and pepper. Pour over the contents of the slow cooker.
    2.Cover, and cook on Low for 9-10 hours

    my all time favorite and go to recipe for gatherings is this carolina pulled pork from the rival cookbook. It's not the usual sweet BBQ sauce most are used to. Serve on rolls with coleslaw! http://www.tastebook.com/recipes/599497-Carolina-Barbecued-Pork
