    Slow Cooker Salmon

    24 oz. bag baby spinach leaves
    1-2 lbs salmon filets
    1 lemon, sliced
    Dill to taste
    Salt and pepper to taste
    ¼ cup chicken broth.

    Fill slow cooker with spinach leaves. Top with salmon filets and sprinkle with salt, pepper, and dill to taste. Top with lemon slices and pour chicken broth over the top. Cover and cook on low for 2 hours. Salmon should flake and be fully cooked.

    4 frozen chicken breasts
    1 jar medium salsa
    1 can black beans
    1 cup frozen corn

    Cook on low 6-8 hours. Then add 1 block of cream cheese. Turn on high for 20 min until it melts and mix together. Shred chicken. Serve on tortillas and top with lettuce, tomato and cilantro.

    So good.

    Wicked Easy Spicy Chicken

    1 Jar of Salsa
    3-4 Chicken Breasts

    ^that is all you have to put it... and it tastes great... served on a salad, shredded on a bun with cheese and veggies, or just eat it as is!

    I also like to add (sometimes), 1 Bud Light Lime, onions, red and green bell peppers, extra spice (franks red hot, etc)...


    Cook on low for 6-8 hours, or on high for about 3.... (it really depends on how much chicken you use and your crock pot)

    I usually make this stovetop and will often grate a little cheese on top too... an awesome, quick, delicious recipe that most of the family really likes

    Smoked paprika gives the chicken a delicious, smoky flavor. This is an easy one-pot meal to prepare for the slow cooker.
    Ingredients:

    4 boneless chicken breast halves
    2 pounds small white potatoes, peeled and cut in 1-inch cubes
    2 medium carrots, cut in chunks
    1 medium onion, cut in thin wedges
    1 teaspoon dried parsley flakes or 1 tablespoon fresh chopped parsley
    1 teaspoon salt
    1/4 teaspoon pepper
    4 tablespoons melted butter, divided
    2 tablespoons Spanish smoked paprika
    1 tablespoon lemon juice
    1 teaspoon Worcestershire sauce
    1 tablespoon honey
    Dash salt
    Dash cumin
    Preparation:

    Wash chicken and pat dry. Combine potatoes, carrots, and onion wedges in a 4- to 6-quart slow cooker with parsley, 1 teaspoon salt, 1/4 teaspoon pepper, and 2 tablespoons of the melted butter; toss.
    Combine the remaining 2 tablespoons of butter with the smoked paprika, lemon juice, Worcestershire sauce, honey, and dash of salt and dash of cumin. Rub chicken breasts with the paprika mixture; arrange on vegetables.

    Cover and cook on HIGH for 3 1/2 to 4 1/2 hours, or on LOW for 7 to 9 hours, until chicken is cooked through and vegetables are tender.
    Serves 4.

    I just used regular paprika and did the potatoes on the side cuz my cooker wasn't big enough. It came out so good and tender, and made enough liquid that I turned my leftovers into a wonderful soup. :)

    Taco Soup in the slow cooker (AKA: Crockpot)

    I do this one in the slow cooker - you can make it vegetarian - just omit the meat, I've made it both ways.

    Brown 1 pound of ground turkey, drain off fat, dump into slow cooker.
    Add:
    1 can of corn (drained)
    1 can of Creamed Corn
    1 can of Rotel
    1 can of stewed tomatoes
    2 cans of beans (your choice- sometimes I do red kidney chili beans, sometimes white beans, sometimes I get the S & W beans with chipotle seasoning on them)
    1 packet of Taco Seasoning
    2 soup cans (from the corn or beans) of water

    Mix well, and cook on low all day - your kitchen will smell AWESOME!!!
    I serve with sour cream, Juanita's chips, shredded cheese, and taco toppings (fresh tomatoes, onions, etc).


    Hubs loves this soup, and when coming home for dinner can smell it outside and is excited for dinner.

    This soup sounds amazing! And my husband is all about tacos!!!!!!!!!!!!!

    Slow Cooker Jambalaya
    approximately 5-6 servings (I actually got 10)

    1 pound skinless, boneless chicken breast halves - cut into 1 inch cubes
    1 pound smoked turkey sausage, sliced
    1 (28 ounce) can diced tomatoes with juice
    3 Tbsp dried minced onion flakes
    1 cup chicken broth
    2 teaspoons dried oregano
    2 teaspoons dried parsley
    2 tsp minced garlic
    2 teaspoons Cajun seasoning
    1 teaspoon cayenne pepper
    1/2 teaspoon dried thyme
    white rice or instant rice (I used 2 packs of Uncle Ben's Ready Rice - Garlic & Butter flavor)

    In a slow cooker, mix the chicken, sausage, tomatoes with juice, onion, garlic, celery, and broth. Season with oregano, parsley, Cajun seasoning, cayenne pepper, and thyme. (I do this the night before and put it in the fridge. I put it in the slow cooker before I leave in the morning.)

    Cover, and cook 7 to 8 hours on Low, or 3 to 4 hours on High. Mix in cooked rice cook for about 15 minutes to warm through.

    oh yum! I do a roast beef in the crockpot...... pretty easy...... put in roast.. cover with water..... add a onion.. not cut up....... sometimes I add some beef bullion ... let it go all day on high...... about 1:30 I add potatoes and carrots and celery...... dinner all ready at 6pm :)

    3 TBS Brown Sugar
    3 Cinn. Sticks

    The very first recipe-I make it with no liquid and I ball up aluminum foil to set the chicken on. It keeps it from getting too fally aparty. I season it with season salt and it tastes just like a grocery store rotisserie chicken.

    My slow cooker has a rack. Never used the rack, will have to try it. But no liquid?

    Nope, no liquid! Rack would be perfect. I've also used upside down glass prep bowls instead of foil balls.
