    I Love This Thread! Cuz I am a crock pot meal lover!! Toooo Easy for us Non cooks ;-) Thanks for all the GREAT IDEAS!!

    My contribution....

    Turkey Soup

    1/2 a Jenni O Boneless Turkey Breast
    2 Cups Egg Noodles (add AFTER the turkey is falling apart) - then cook for another couple hours on low
    2 Containers Swanson NO SALT added chicken broth (plenty of sodium in the turkey for flavor - so this helps keep it lower)
    1/2 - 1 Onion cut up in rather large slices - (or small) - its mostly for flavor for me...

    Shred the turkey after 8 hrs or so....its falling apart anyway

    And My other Fav (other than the typical pot roast)

    Chili

    1 Can Black Beans - Drained
    1 Can Light Red Kidney Beans
    1 Can Pinto beans - drained
    1 - 2 Cans Rotel
    1 packet mild or medium or hot - taco seasoning (your choice obviously - (low sodium is a plus)
    1 packet ranch dip mix
    Simmer for a few hours....awesome!!

    Today I made this for the boys-

    Beef Stoganoff
    Prep Time: 15 minutes

    Cook Time: 6 hours

    Total Time: 6 hours, 45 minutes

    Yield: 4 servings

    Ingredients

    1 1/2 lbs beef stew meat, cut into cubes
    salt and pepper
    2 teaspoons paprika, divided
    1 tablespoon vegetable oil
    2 cups sliced mushrooms
    2-3 shallots, thinly sliced
    1 1/2 cups beef broth
    1/2 cup sour cream
    chopped fresh parsley
    Instructions

    Sprinkle the beef with 1 teaspoon of the paprika and season with salt and pepper. Heat the oil in a large skillet over medium-high heat. Add the beef and cook until browned on all sides. Transfer to a slow cooker.
    Add the mushrooms and shallots to the skillet. Sprinkle with the remaining teaspoon of paprika. Cook for 3 minutes; season with salt and pepper. Add in the beef broth and sour cream and cook for 2 more minutes, scraping up any of the browned bits on the bottom of the skillet. Pour the mixture over the beef in the slow cooker and cook until beef is tender, about 6 hours on low.
    Sprinkle with chopped parsley and serve with egg noodles.

    I turned mine off after 4.5 hours, my beef was in pretty small pieces

    Chicken Parmesan

    2 to 4 boneless, skinless chicken breast halves
    1/2 cup Italian Seasoned Bread Crumbs
    1/4 cup Parmesan Cheese
    1/4 t black pepper
    1/4 t kosher salt
    1 TBSP olive oil
    1 egg, beaten
    sliced or shredded mozzarella cheese
    favorite jarred marinara sauce


    Spread the 1 TBSP of olive oil into the bottom of your crockpot stoneware insert.
    Beat the egg with a fork in a separate bowl.
    Mix the bread crumbs with the seasonings and the Parmesan cheese in another separate dish.
    Dip the chicken into the egg, then into the bread crumb mixture, coating both sides with crumbs, cheese and seasonings.
    Place the chicken breast pieces in the bottom of the crockpot.
    Layer 2-3 slices or 1-2 cups of mozzarella cheese on top, depending on how much cheese you like.
    Cover chicken and cheese with entire jar of marinara sauce.
    Close lid and cook on low for 6-7 hours or high for 3-4.
    Serve with your favorite pasta.

    Pumpkin Chicken White Bean Chili~ It is the season and this is really good!
    Only 180 calories and 3g of fat per cup :)

    Brown 1lb 99% lean ground turkey
    1/2 tsp olive oil
    1 small onion, chopped
    3 garlic cloves, minced
    1 tsp chili powder, to taste
    2 bay leaves
    2 tsp cumin
    1 tsp oregano
    1 or 2 (15 oz cans) of white northern or navy beans, rinsed and drained
    15 oz can pumpkin puree (not pumpkin pie filling)
    4.5 oz canned chopped green chile
    2 cups low sodium, fat free chicken broth
    fat free sour cream for topping (optional)
    chopped cilantro and chives for topping (optional)
    salt and pepper to taste

    Brown the ground chicken in a pan. Add beans, broth, pumpkin filing, green chile, and seasonings except the cumin into your slow cooker. Saute the onion and garlic with the cumin and olive oil for 3-4 minutes. Add the ground chicken and sauteed onion and garlic to the slow cooker once its ready. Slow cook on high for 3 to 4 hours, remove bay leaves before serving.

    I added chili powder, garlic powder, pepper, and onion powder to the ground chicken while browning it because I like lots of flavor.

    Found a yummy dessert recipe for the crock:

    4 large baking apples
    1 tbsp lemon juice
    1/3 cup chopped dried apricots
    1/3 cup chopped walnuts or pecans
    3 tbsp packed light brown sugar
    1/2 tsp ground cinnamon
    2 tbsp melted butter or margarine

    Scoop out center of each apple. Mix apricots, nuts, brown sugar, and cinnamon in a bowl. Add butter and mix well. Spoon mixture evenly into apples.
    Pour 1/2 cup water in the bottom of crock pot. Place 2 apples in the water and arrange the other 2 apples above but not directly on top of the lower apples.
    Cover and cook on LOW 3-4 hours or until apples are tender.


    Spinach Gorgonzola Corn Bread

    2 boxes cornbread mix (8.5 oz mixes)
    3 eggs
    1/2 cup cream
    1 box (10 oz) frozen chopped spinach, thawed and drained
    1 cup (4 oz) crumbled Gorgonzola
    1 tsp black pepper
    Paprika (optional)

    coat crock pot with nonstick cooking spray. Mix all ingredients in bowl. Place batter in crock pot, cover and cook on HIGH 1 1/2 hours. Sprinkle with paprika. Let cool completely before serving. Makes 10-12 servings.

    Yum! I want to make this corn bread, but will modify it so it's low cal...let's see how it goes!!!!

    ~Bourbon Chicken~

    2.5 lbs chicken tenderloins
    1 clove fresh garlic minced
    1/4 tbsp grated ginger
    3/4 tbsp red pepper flakes
    1/2 cup no sugar added natural apple cider
    1/3 cup brown sugar
    2 tbsp ketchup
    2 tbsp cider vinegar
    1/3 cup low sodium soy sauce
    1 cup water

    Toss everything in the crock pot, and stir. Cook on low for 4-6 hours. I serve over rice. You can add 1 cup water, and 1 cup instant brown rice the last 20 minutes of crock pot time.

    I found this recipe on here a month or so ago and it was YUMMY!

    MOROCCAN Chicken and Lentils

    1 8 oz package baby carrots
    1 1/2 cups lentils, uncooked
    1 1/2 pounds FROZEN chicken breast tenders
    2 tablespoons minced garlic
    3/4 teaspoon salt
    2 teaspoons salt-free Moroccan rub (or 3/4 teaspoon ground turmeric, l/2 teaspoon ground red pepper, and l/2 teaspoon ground cinnamon)
    2 (14 l/4 ounce) cans fat-free, reduced-sodium chicken broth

    Place all ingredients, in order listed, in a 4 or 5 quart electric slow cooker. Cover and cook on high setting 5 hours. Or, cover and cook on high setting 1 hour; reduce to low setting, and cook 7 hours. Yield: 6 (1 cup) servings.

    Easy Chicken & Dumplings

    1 can cream of mushroom soup
    1 can cream of chicken soup
    2 "cans" of milk skim milk
    2 pounds of boneless, skinless chicken breasts cut in pieces or tenderloins
    2 bags of frozen veggies (whatever mix you prefer)
    1 8oz can of refrigerated biscuits
    A little water to thin out mixture if nessecary
    Salt, pepper, garlic powder to taste

    Mix soup, milk & chicken in crock pot for 4-6 hours on low. Last hour toss in frozen veggies and stir. This is when you would add water if nessecary. Then break dough apart into pieces. Toss in crock pot for dumplings.

    Stuffed Green Pepper Soup

    1 lb ground beef
    1lb italian sausage
    1 onion chopped
    2 green peppers chopped
    1 red pepper chopped
    2 cans diced tomatoes (I use the italian seasoned ones )
    1 large can tomato sauce
    2 cups water
    2 italian dressing seasoning packet
    1 cup instant rice
    1/3 cup brown sugar

    Brown ground beef & italian sausage in skillet. Then add meat along with the rest of the ingredients to the crock pot on low for 6-8 hours.

    Shredded Chicken Tacos

    3lbs chicken breasts
    1 jar of salsa ( 16 oz or larger )
    1 packet of taco seasoning
    1 jar taco sauce ( approximately 4 oz total )

    Put in all wet ingredients. Layer chicken over that. Sprinkle taco seasoning on top. Cook on low for 4-6 hours. Serve with taco toppings ( cheese, sour cream, lettuce, tomato, guacamole, ect ) on flour or corn tortllias.

    Beef Stroganoff

    1-2lbs steak cut into strips ( sirloin seems to be the cut I prefer since it's leaner)
    1 can cream of mushroom soup
    1 can of milk
    1 can of water
    2 cups sour cream
    salt
    black pepper
    red pepper
    garlic powder
    dried onion
    finely sliced mushrooms
    egg noodles

    I pretty much eyeballed this one so I don't have exact measurements for the spices pinch here, dash there. You put everything in the crock pot except for the noodles. Cook on high for 4 hours. I personally prefer to boil my noodles vs putting them in the crock pot so I will do that. You could add the noodles in the last 30 minutes before you plan to serve if you add more water.

    Buffalo Chicken Dip

    1.5 lbs chicken breasts
    1/2 bottle of hot sauce ( I prefer Lawry's buffalo bbq marinade )
    1/2 bottle of beer ( don't care which kind cause it cooks off but usually something low cal )
    A brick of of fat free cream cheese
    2 cups of shredded cheese ( I use Kraft Fat Free Cheddar )
    1 small bottle of fat free chunky blue cheese dressing ( Kraft )
    1 packet of ranch powdered dressing

    In crock pot put chicken, beer and hotsauce on high for 4-6 hours. Last hour add in cheese & dressing. Serve with pita chips or tortilla chips.

    Spicy Roast

    1 beef roast, 3-4 lbs.
    1 can diet Coca-Cola
    1 package onion soup mix
    1 bottle chili sauce

    Toss it all in the crock pot for 4-6 hours on high.

    Orange Beef
    2 pounds beef round steak, sliced or beef stir fry strips
    1/4 cup low sodium soy sauce
    2 teaspoons ground ginger
    3 tablespoons honey
    1/2 cup orange juice
    1 red bell pepper, seeded and sliced
    1 green bell pepper, seeded and sliced
    6 green onions, sliced

    For absolute best results, marinate the meat the night before in a plastic bag with the sauce ingredients: soy sauce, honey, ginger, and orange juice. In the morning, dump the contents into an empty cooker and add the vegetables on top. Cover and cook on low for 6 to 8 hours, or until meat is fully cooked and super tender. Serve over rice with the crockpot juice.
