    I agree with almost every thing here but I especially love homemade avocado smoothie using fresh avocado with almond or coconut milk. Yumm!

    Zucchini and Yellow squash sauted in just a smidge (1 tsp) of extra virgin olive oil...I could eat it all day

    Or mashed cauliflower (steamed) w/a little celtic sea salt, pepper, garlic, fage 0% fat plain yogurt and a dash of I can't believe it's not butter spray --- I could REALLY eat this all day long! LOVE IT!! <3

    Putting a cored, beefsteak tomato under the broiler until soft. then stuffing it with cooked mixed veggies and cooked ground turkey, beef or sausage. Top with a little bit of gorgonzola and put back under the broiler to melt the cheese. Can put on a bed of lettuce or spinach with a bit of blue cheese dressing or cottage cheese. Have a side of berries.

    Raw cauliflower. Yum. I'll eat it alone or with any kind of tasty dip or hummus, mixed into salads, wherever I can get it. Also, I love cabbage instead of lettuce in salads.
