    Why? Aside from someone trying to slowly convert to veganism, what's the upside?

    I think it's a great challenge!
    Replace the red meat and pork with beans, lentils, or soy and:
    -cut down on your cholesterol
    -cut down on saturated fat
    -cut down on antibiotics and hormones that are in conventional meat
    -increase fiber and healthy non-meat protein
    -help the environment: no animal waste (poop!) polluting the air, water, and soil
    -help the animals, by not eating them!

    Why would I want to forego eating things that help me retain\build muscle and strength? I think a lifelong challenge of not OVERDOING red meat or pork (or anything else) would probably be better.

    -help the environment: no animal waste (poop!) polluting the air, water, and soil - WOULDN'T THERE BE LESS POOP IF I EAT THEM? ISN'T ANIMAL POOP GOOD FOR SOIL?

    -cut down on saturated fat <- Natural sat fats aren't really bad for you.
    -cut down on antibiotics and hormones that are in conventional meat <- You can get natural meat. And you say this, but also suggest soy?
    -increase fiber and healthy non-meat protein <- You don't have to reduce meat to increase fiber.
    -help the environment: no animal waste (poop!) polluting the air, water, and soil <- Greenhouse emissions from cows are damaging. I'm eating them, therefore, reducing the damage to the ozone layer.
    -help the animals, by not eating them! <- They aren't happy in their boxes anyway. I'm helping them by eating them.
