I like to keep it in it's skin, dice it all up in there...sprinkle some salt and pepper...sometimes a little evoo..and I use rice and/or bean chips to scoop it out! Delicious.0

Avocado smoothies are delicious. A little protein powder, half an avocado, some milk and ice, blend. You can add banana, too. Really yummy.0

Avocado Hummus
1. Add the following to your food processor:
-1 can of white beans, drained and rinsed
-1 avocado, cubed
-juice from 1/2 of a lime
-1 tablespoon + 1 teaspoon of olive oil (a lower fat option: substitute oil for juice from the beans)
-1/2 teaspoon sea salt
-1/4 teaspoon cayenne pepper
2. Blend until smooth.... EASY AS THAT!

I eat a raw, plain avacodo for my dinner a couple times a week. Just cut it in half, salt it, and eat it out of the peel with a spoon! I love it.
Also, I like to slice it up, slice up a tomato (or use cherub tomatoes) and mix it up with a can of garbanzo beans. Add a tablespoon of Italian dressing...voila! 1/2 for now, 1/2 for tomorrow. It's super filling, high in protein, high in fiberm, simple, and delicious.0 -
I love eating avocado alone or in anythingI can put it in lol...I love a whole wheat piece of bread spread avocado and slice cucumber on top mmmmmm!!! Now I want one lol0

I discovered a recent love of these and here are some things I do with it. These of course are when it is mashed and spreadable or in guac form.
1. On veggie burger (but hear turkey burger and salmon burger good too)
2. With tuna and veggies in pita
3. On turkey sandwich
4. In soups instead of sour cream
5. Mash and put in salad instead of dressing
6. On bagel as a spread...just bagel and avacado...sooooo good
7. With egg whites on english muffin
8. In grits with shrimp (weird, but so good)

You just cut the avocado in half, take out the stone and make a criss-cross cut with a knife so the sauces can penetrate. Cover in lime juice and chipotle tabasco, then add parmesan cheese and broil. It is awesome.0 -

add some cucumbers or tomatoes if wanted...

I am unsure if you like fish, but I guess it could be made with chicken or vegetables...
For Christmas Eve, my family cooks a purely Italian fish dinner and one of the dishes my father makes is a shrimp salad stuffed into half an avocado and spoon Louie sauce over it.. I do not have the secret recipe but I found one online.. it is delicious!!
Louis Sauce:
1 cup mayonnaise
1/4 cup heavy cream, whisked to soft peaks
1/2 cup chili sauce
1 teaspoon Worcestershire sauce
1 teaspoon hot sauce
2 teaspoons lemon juice
1 teaspoon grated onion
1/4 cup minced green bell pepper
1 teaspoon minced garlic
1/4 teaspoon grated lemon zest
1/8 teaspoon salt
Pinch freshly ground black pepper
Whisk the first 10 ingredients together in a medium bowl and chill until ready to serve. It will keep covered in the refrigerator for 3 to 4 days.0 -
