Baked chicken tenders. OMG SO GOOD!
I love chicken tenders. Who doesn’t? But the fried stuff you get from most places is incredibly unhealthy. This homemade version I came up with is delicious, filling, high-protein, and just overall better for your body!
Ingredients:
8oz boneless, skinless chicken breasts sliced thin (around 1 inch)
1/2 cup Panko or similar bread crumbs
1/4 cup grated parmesan cheese
1 tbsp light butter
1/3 cup yellow musard
All-purpose seasoning to taste
Melt the butter in a bowl, then stir in mustard until well-combined. In another bowl, combine bread crumbs, parmesan, and seasoning. Dip your chicken slices (you should have cut them pretty thin) into the mustard mixture and coat completely, then coat entirely with breadcrumb mixture. Lay out tenders on a baking pan coated in non-stick spray. Bake at 350 until chicken is cooked through, about 45 minutes. I served mine with honey mustard (only 10 calories a tablespoon)!
Nutritional Info: Calories: 565 | Carbs: 35g | Fat: 15g | Protein: 70g
Note: You may have to play around with ingredient amounts. I didn’t actually measure, I just eyeballed everything. I also didn’t use all of either mixture.

I use the same panko recipe, but get rid of the butter because you dont' need it...
Chicken tenders
Skim milk to wet the chicken
Press the chicken into into the tenders on both sides
Bake it on a pizza stone until tender.....30 min. until bubbly and panko is browning
dip it into a mustard of choice....panko automatically represents the crispy frying affect.;))0 -

Awesome! You're right, the butter/mustard/parmesan really isn't necessary, but I quite enjoyed the added flavor, haha.0 -
That does sound good. I am by myself, so trying to come up with recipes that don't leave me tons of leftovers is great. I can see that I could make this with just one chicken breast.0

You just made my night! I love chicken tenders and hate that baked ones normally taste, well, kind of blah and limp. I'll be trying this recipe for sure!0

This sounds wonderful! Thanks for the recipe.
Would probably work cut into nuggets too, and baked on a rack for all over crispiness.
I am going to make these today!
Maybe experiment with jalapeno mustard.0 -
