    The chicken saltimbocca I was planning to make Friday night as a secondo. Added roast courgette and potato to make it a standalone meal. I think I could do this on the weeknight if the hubby does the mechanical step of halving a chicken breast along the perimeter and pounding the halves thin before I get home along with peeling potatoes. One chicken breast feeds two people.

    Yum!

    Bagged up 1 oz mixed nuts for snackage. A blended variety from a few different kinds, salted, unsalted, bakers walnuts, mixed... i want to pick up a few more before I bag more; brazil and pistachios.

    Takes time to find and buy or make/batch prep food that helps us.... worth it!

    And, i use, frequently change gloves to save my hands from excess washing. Inexpensive (and can find even cheaper online in larger amounts).

    During the pandemic, I resorted to going online to nuts.com and itsdelish.com for nuts and fruit assortments (and herbs/spices). Considering restarting my ordering as I really dont find the assortment and quality at my local groceries to be as good. Especially when it comes to creating my own blends and mixes.

    Summer hangs on. Actually, it is much more pleastant grilling outside now than it was in the peak heat. Tonight ( Sunday) marinated chicken thighs, roast corn, foil pack ("Scout Pack") vegetables, in two types types, a Tuscan style yellow squash, peppers, onions for me, and a more Neopolitan Italian herbs zucchini for my wife, who doesn't care for squash. Moderate macro numbers.

    Rice, roasted corn, shredded chicken breast, and pinto beans I cooked in homemade stock with a ham hock. The goop is an avocado, plain Greek yogurt, lime juice and garlic. And pickled jalapeños.

    I got home at 19:50 and managed to get dinner on the table in 20 minutes. This relied on having a lamb shank that cooked sous vide for 24 hours all day Sunday. I made a gravy on Sunday with liquid drained from the sous vide bag, some caramelized onion I had in the freezer and some sherry. The shank only needed browning for 15 minutes in the air fryer prior to serving. Baked potatoes were pricked with a fork, nuked for 5 minutes and then finished for 15 minutes in the air fryer to dry out the texture. In the meantime I made a salad of finely sliced fennel and apple. I had ranch dressing in the fridge and candied nuts in the store cupboard.

    Something in the background is directing the link to pages that don't exist yet - in the future. I found content by working backwards to an active post. I'm guessing it will get fixed eventually.

    It's happening on some discussions for me and not for others. Odd indeed.

    Yep, on the long multi-page threads like this one. I was afraid it was gone, so glad could find it checking backwards... 8 pages back this time.

    Picked up the last ingredient fresh baking powder today for the focaccia. Looked at the video again, which was followed by her very similar ciabatta bread. Looking forward to trying both.

    Did more Naan mini pizzas for dinner; torn rotisserie chicken, canadian bacon, veggies. Found some smaller naans at 150 cal, 25g carbs that are 1/2 the size of the prior larger rounds, so did not need to cut in 1/2.

    MFP calced about 445cals, 35g carbs for this all told if i remember correctly.

    I got home at 19:55 and it took 20 minutes to get dinner on the table. It helped that I had sous vide several servings of eye of round roast beef on Sunday for a few hours and made gravy from the sous bag liquid and caramelized onion I keep in the freezer. So tonight I put some fennel in to roast in the air fryer, along with parboiled potatoes that the hubby peeled before I got home, and the beef to brown. Made a iittle green salad in the meantime with ranch dressing I keep in the fridge and candied pepitas we keep in the store cupboard.

    Well I guess we have to try to fill up those 8 pages. Here is my Friday night dinner out. Hubby thinks eating out on Friday makes the weekend feel longer. Our cheap but great neighbourhood place for maki rolls.

    I finally went back far enough to be able see the latest posts. It's funny because I went to the start page and there were a lot of different posters then. What has happened that it seem like the same people post now? I really enjoy seeing all the food choices and am constantly looking up the ingredients. Thanks to all of you who keep this going.

    It's weekend and nice that I don't have time pressure with respect to getting dinner on the table. Starter of tuna tartare followed by papardelle with leftover tomato sauce that's been lying in the fridge for a week. I made an effort with the starter to use up bits of leftover sauce we had lying in the fridge. The diced beets in the bottom layer was with some leftover Thai tamarind and lemongrass sauce. The diced avocado got mixed with some aji verde we had in the fridge combined with mayo. I used the Michel Roux BBC recipe for the tuna layer. Around the plate I drizzled around some tiradito sauce we had in the fridge.

    We went back to the taco restaurant nearby that was soft launching their new menu with a 50% discount. I tried the cricket patty taco. The crunchy texture was slightly disconcerting.

    A meal that takes 20 minutes to prepare if you’ve got leftover rice in the freezer that just needs reheating in the microwave. Vietnamese roasted aubergine salad with Thai garlic pepper chicken.

    This is a test. I let the thread rest for a bit before seeing if the display problem resolved. It hasn't. I'b back at page 1205, the last I can see (now, before it was an earlier page). So I'm posting this to see if I can see it. No photo included just to be sure.

    Mine defaults to page 1214. Then I have to search backwards.

    Rice and curries at the new Sri Lankan near the flat. We ate out to reduce pressure on me for cooking during the week, as I get home pretty late from the office.
