The hubby cooked with his limited kitchen repertoire. Store bought mash, store bought sauerkraut, store bought meatballs. Homemade cherry tomato salad.

Chilled fresh fruit salad & stir fry vegs on hand for meals.

The standard too hot to cook menu at our place. Salmon tartare with microwaved poppadoms for scooping. Strawberry tarts. I bake the shells in the air fryer and make creme patisserie on the weekend so the tarts can be quickly assembled on weeknights.

I went to the farmer market last Wed and got 3 small eggplants. I was going to make eggplant parm and then realized I didn’t have breadcrumbs. I have an Almond Cow which is a non dairy milk maker and there’s a recipe to make “bread crumbs” with the left over pulp. It took a little extra time but it came out great!

When I run out of breadcrumbs I blitz up some other soft-ish grain such as oatmeal or quinoa flakes in the food processor. I am sure breakfast cereals would work too.

Friday (08/01): "summer simplicity" keeps rolling along. It has been an interesting weather week, including tonight. Indoor grilled turkey burgers, deli cole slaw and redskin potato salads, homemade Med-style marinated tomato salad with feta crumbles. The roll is a "Miami roll" from the deli, too (I have been on a bit of a sabbatical from baking along with reduced bread consumption; other than fleeting novelty, most of the commercial products just reinforce that home baking is just superior, so my sabbatical is likely to end soon, lol).

We went to a homely Turkish cafe for dinner. Their method of slashing the skin of chicken wings prior to charcoal grilling was a technique I have never seen before. Will adopt it for air fryer skin on chicken at home. More fat renders off so the skin is crisp and paper thin.

A girlfriend came over for dinner. I cooked Chinese and did Sichuan sour fish soup with pickled mustard greens, Cantonese stir fried shrimp with snow peas. Another Sichuan dish of Di San Xian where I air fried the potatoes and aubergines instead of traditional deep frying. I couldn't help feeling amazed that my mom used to put three stir fries on the table every night when I was growing up. Dessert was mango sorbet we had lying in the freezer with sticky rice.

(Saturday, 08/02): gorgeous evening here, just right for some outdoor grilling. Made a double batch of chicken thighs, with the expectation that we can escape to a swim tomorrow, no need to rush home to cook. Added grilled yellow summer squash (making coins of the main body, spears of the thin necks). Rounding out the meal was more of the tomato-feta salad from yesterday (greatly improved from overnight marination) and the last of some deli cole slaw.

Shrimp scampi with fresh gluten free fettucini, fresh petite beans & broccolini, grated parm, chicken dumplings.

Dinner of Chinese leftovers. Cantonese lo bak gao (turnip cake) I meant to serve yesterday as a starter that was not needed. Leftover suan cai yu (fish with pickled mustard greens) stretched with tofu and served over udon noodles.

Savoury pepper lemon spiced roast cabbage with onions, peppers, tomatoes & craisins, variety garden fresh beans & snap peas, roast lamb & potato. Cherries with grapes.

Got home at 20:00 stressed out from work. Dinner not too bad considering the circumstances. Lamb shank that has been in the sous vide since Sunday morning browned in the air fryer on top of roast potato. Asparagus was done in the air fryer too. Spinach cooked on the stovetop. Lamb gravy we had in the freezer.

Bulgogi wraps- ground turkey, cauli and jasmine rice blend, veggies, garden lettuce and peanut sauce vinagarette

Got home late. Chilli con carne from a batch made last month pulled out of the freezer. Courgettes roasted in the air fryer.

Every few months I make some masa harina tortillas to freeze in small portions. Tacos are a good way to use up small quantities of leftovers. We used up leftover chilli con carne from last night augmented with bits and pieces lying around in the fridge such as half an avocado, a few leftover pickled beets, a quarter pack of feta, a tiny bit of coriander. Air fryer corn and some quick pickled red onion were made fresh.

Looks good. I happened to try making a "Mexican corn" foil pack on the grill with burgers last night (a quickie meal), hoping to get some char like your air fryer cobs. Too much inherent moisture in the pack to achieve that, but the result was tasty anyway. If you let your pickled onions percolate for a few days, they transform wonderfully. They only last a few weeks, if they last that long uneaten, lol.

I get char by marinating as for Cambodian street corn which is coconut milk sweetened with a little sugar and seasoned with fish sauce for saltiness. It usually contains finely sliced spring onions which I didn’t have on hand last night. I roast without foil in the air fryer 15-20 minutes total. The sugar in the marinade helps with char.

We just got back from a long weekend in Amsterdam. It is really hot in London. Soupe au pistou made with storebought pesto, a handful of frozen veg and some air fried aubergine because we had a little piece lying at the bottom of the produce drawer. Salad of rucola with smoked chicken we dragged home from Amsterdam and candied nuts I made tonight. Cheese souffle cooked in the air fryer.
