My sister is doing a bringalong dinner for Christmas Eve, and I was wondering what to make last week.
I called my sister and she said "well everybody just assumed you'd be bringing your pies, they're your specialty"
I've only brought them to one or two things but apparently they are "my thing" now. They are pulled pork and pear cider jaffle pies, and are easy to do so that cool with me, but I didn't realise I had a potluck specialty!
What about you? Do you have one?

yes, I call them smashed potatoes. It's really just mashed potatoes. I boil them until I forgot about them, like an hour. Then they're nice and soft and I can smash them with a fork, add some low fat sour cream, 2% sharp cheddar cheese (it's lower in fat) garlic salt, some chopped up bacon and call it a day.
They're easy to make, and actually not bad calorie wise, and they're delicious.0 -

Buffalo chicken dip
Recipe:
1 roasted chicken broke into pieces
1 16 oz. bottle of Ranch
1 package of cream cheese
Frank's Red Hot sauce (small bottle or more to your liking)
Mix in a large bowl and top with shredded cheddar cheese
Bake at 350 for 20 minutes.
Serve with tortilla chips or celery.0 -
My favorite before doing keto was chili con queso. Take one can of Hormel chili (no beans), one bar of cream cheese, a can of diced black olives, and some salsa. Heat in a pan until mixed, serve with chips or warm tortillas. Takes 5 minutes to make, and usually is a hit. Can't do it now though because of the chips.
Another I recently made was deviled eggs with a slight twist. Instead of putting relish in them, I diced up green olives and added some bacon bits. Turned out really well, and they are keto friendly.0 -
Try proscuitto wrapped cantelope, too. Salty-sweet always goes well.0

Veggie Pizza
1 can low-fat Pillsbury crescent rolls
1 8 oz. block Philly Light cream cheese, cut into chunks
1/4 c. Calorie Wise Miracle Whip (or something similar, like low-fat mayo)
1 tsp. garlic salt
1 T. dill weed
chopped veggies (I use red pepper, broccoi, celery, and fresh mushroom slices)
Preheat oven to 375 degrees. Beat cream cheese, Miracle Whip, garlic salt, and dill weed with electric mixer until smooth. Set aside.
Spread crescent rolls on a cookie sheet and press to fit. Bake for 10 minutes or until nicely browned. Let cool.
When crust is cool, spead on cream cheese mixture and decorate with chopped veggies. FInish with salt & pepper and cut into small squares.
1 small (approx. 4" x 4") square equals approx. 70 calories.0 -

It totally is! And you can add parsley to make it look purdy and people will think you are some master chef when really you are just a lazy butt who is also cheap...no, really. That's a big part of why I make these. Potatoes are cheap!0 -

Before I became an adult with taste buds I used to being choc ripple cake to parties.
It's literally just chocolate cookies sandwiched together into one big log with an entire can of whipped "cream" holding it together. Then you pour milo all over it and leave it in the fridge overnight so the cookies go soft. For shame.0 -
My antipasto salad.
Drained garbanzo beans, mozz pearls (or sticks cut up), black olives, artichoke hearts, roasted peppers, scallions. Toss with a little vinaigrette. Colorful, easy and always a hit.0 -

I bring Bread Pudding with Whiskey Sauce...a recipe I found in Cooking Light many, many years ago. The Whiskey sauce is what makes it yummy.0

We have a few specialties:
Little Smokie Wraps (dead simple: cut a sheet of crescent roll dough into small triangles and wrap around each smokie, then bake for 10 minutes)
Bacon-wrapped dates (the carmelized sugar in the dates with the crispy-salty-meaty goodness of bacon...oh man)
The Big Salad (we make a huge version of caesar or an Italian chop)
My wife makes the best pies in the world: berry, apple, pecan, and my favorite, pumpkin. Fresh pumpkin, a three-generations-old crust recipe, topped with real whipped cream. After having a slice of this pie, you'll never want to buy another store-bought pumpkin pie again..Costco? Please, those mass-produced boxed things are an insult to the perfection in baking that comes out of our oven.0 -

Simplified, chuck a pork shoulder in a crockpot for 8 hours with some onions and a couple of sliced pears, at the 2nd hour pour in a combination of a BBQ sauce of your choice, brown sugar and vinegar to taste and half a bottle of a sweet pear cider. At the 6th hour use two forks to shred the pork.
Return shredded meat to the crockpot along with the rest of the pear cider.
Make or buy a puff pastry, I use a Jaffle pie maker so you just chuck the pastry and filling in and away you go.
After the pie is cooked heat some butter and brown sugar in a skillet with a dash more cider. Get it nice and hot and throw in some pear slices, fry until crisp and place on top of the pies

This year I have been bringing brussle sprout and raddish skewers to potlucks. Just roast them with EVOO and put a little sea salt on top. Potlucks are always short on veggies.
People always ask me to bring my raspberry phyllo bites: Mini phyllo cups filled with brei and raspberry jam, topped with a fresh raspberry and baked. Yum!0 -
Oh I'm also using the leftover pastry to do 'Reindeer Poop' for the kids. You just scrunch the pastry into a "log" and bake it, then dip in chocolate (crushed peanuts are optional, but they add realism) and serve once cooled. They love it!0

Same thing happened to me at work potlucks! I only did a broccoli salad once or twice, and then i went to think of what to sign up for and they're like "well, aren't you bringing your usual? we love it!" so, why not! so simple though
i tried something new this year though and i imagine it will become my usual... mini twice baked potatoes yum and cute!0 -
If I have time to pull out all the stops, i make these croquettes....you can use any kind of meat, add mushed sweet potato, some cheese, whatever kind of spice you like with a little butter. then you roll them in ground up almonds and walnuts, fry those suckers. serve it with some creamy sriracha dip.0

Green bean haystacks!!! I wrap green beans in bacon - add brown sugar and butter bake in the oven and they are wonderful!!! to lower calories, you can use turkey bacon and light butter. I usually just lightly layer the bottom in little pats of butters and then place the wrapped green beans then sprinkle with brown sugar!!!0
