Bacon wrapped jalapeno poppers.
Cut jalapenos open by slitting on side of it. carefully remove seeds.
Mix together fat free cream cheese, diced onions, bacon bits, garlic powder and diced jalapenos or green chilis. Spoon about 1/2 tablespoon into the hollowed out jalapeno. Stuff 1 cheddar li smokie in with the cream cheese mixture.
Wrap each jalapeno with one slice uncooked bacon and pin it all together with a toothpick. Place on a broiler pan.
Bake at 350 for about 15-20 min until bacon is cooked. Serve hot or cold.
1 bacon wrapped jalapeno is 101 calories, 7grams protien, 6 grams fat
These are a HIT at parties, football games, etc. I plan on making these for our New Years Eve game night!0 -

Chiles en Nogada
Ingredients:
6 large green chiles, for stuffing
3/4 cup crema or sour cream
1/2 teaspoon sugar
1/4 cup evaporated milk
1/2 cup finely chopped walnuts
1 pomegranate, seeds separated
1/2 lb ground pork or beef
3 garlic cloves
1/4 of an onion, peeled and diced
1 tablespoon lard or vegetable oil
1 apple, peeled, cored and seeded, coarsely chopped
2 tablespoons unsalted almonds, chopped
1/4 teaspoon cinnamon
pinch of nutmeg
1/4 teaspoon cumin
1 bunch fresh parsley, coarsely chopped
2 tablespoons raisins, softened in warm water
3 eggs
Preparation:
Roast the chiles and remove the skins and seeds.
Heat the oil or lard over medium heat in a large pan. Add in the beef or pork and brown until nearly done. Add in the garlic, onion, apple, almonds, cinnamon, nutmeg, cumin, pinch of salt and pepper and cook for about 5 minutes.
Beat the egg whites to stiff peaks with a mixer or a whisk. Fold in the egg yolks and a pinch of salt. Dip each stuffed chile in the egg mixture and fry until golden brown.
Stuff the chiles with equal portions of the stuffing. Blend or mix the crema, walnuts and sugar with the evaporated milk. Pour over the freshly cooked chiles and sprinkle with pomegranate seeds.0 -

I believe the best thing to make that is healthy for you is ceviche. Its shrimp,crabmeat,avocado, lemon juice, onions, tomatoes and dont forget the celantro!! If you dont want to use shrimp you can sub with a type of white fish.0

ic. roasted tomatos 2 chiplote peppers --blender till smooth
put in pan reduce until consistince of tomato paste--
throw in mexican crema or sour cream --
add raw protien (shrimp is what recipe calls for) let it cook--
serve it w/ tostada's, chips or tortillas
its a little spicy 1 chipolte will do--p.s. scrape out the seeds, it will be less spicy +you can control all the calories going in0
