    Congrats on losing weight. But after reading your word document I do not agree that your diet is the healthiest thing for you to do.

    You've gone over how many years of social conditioning that Carbs > fat .

    A lot of doctors these days are preaching that Insulin (caused by carbs) is the root of all evils. Insulin spikes cause cancer, clogged arteries, diabetes, etc. And it is true. Humans used to live off a 75% fat diet. That is why our brains are as big as they are.

    You should really read into paleo diet. You learn a lot about human history and food culture. Sugar (Carbs) was never really part of human evolution. Society these days has lead us to believe that eating fat causes fat. Not true at all. Fat does not have a GI, fat does not raise insulin. THink about it.
