    Have you ever tried "Beanitos" chips. They are made with pinto beans and flax. High fiber, corn ree, gluten free, and 4g of protein. I like the cheddar cheese flavored ones best. Can't wait to try them with broccomole! :smile:

  • For those that have made this, when you cut up your broccoli, do you use the stalks and everything? I have my broccoli cooking right now and I figured since I was going to be blending it all up anyway, might as well use the stalks. Should I have just used to tops??

    I've used all but the last 3 or so inches of the stalks, because my dogs like to eat them :embarassed: But I can't see why you couldn't use them?

  • made this yesterday! I added a smidge more salt than it called for. Also added a little bit of lemon juice at the end. It was great! I know this says to serve warm, but I really like this cold! I put it on my sandwich and it was fabulous. Gave my sammie a little kick. Great recipe!

    Okay, this stuff is seriously good. I'm eating it right now, with baked blue corn chips from Trader Joe's.

    Made it with light cream cheese instead of fat free.

    Here you go!

    Ingredients

    3 cups chopped broccoli
    1 jalapeno, chopped, seeds removed
    2 tbs green onions
    1 tsp olive oil
    2 ounces fat free cream cheese (or silken tofu, goat cheese, sour cream, cashew cream, something creamy)
    1/4 tsp chili powder
    1 tbs cilantro
    1/4 tsp salt
    1/4 tsp black pepper
    1/4 tsp garlic powder
    Instructions

    1. Cook the broccoli in lightly salted water until very soft. Overcook the broccoli in comparison to the al dente cooking that most recipes recommend.
    2. Drain broccoli very well.
    3. Transfer to a food processor. Add the remaining ingredients and process until smooth, add additional olive oil for a smoother texture.
    4. Serve warm

    I used light cream cheese, not no-fat, and added a touch of cumin, but otherwise followed the recipe to a T.

    All of the above. Dipping celery in salsa is good too. Sounds funny, but it's the crunch.
