I threw this together a few nights ago and I was in loveeee
2 cups of spinach 12 cal
1/4 cup edemame 60 cal
2/3 cup frozen mixed vegetables 60 cal
4 oz grilled chicken breast 120 cal
2 tbsp of avocado 50 cal
12 raw almonds 80 cal
2 tbsp of salsa verde 20 cal
Saute the vegetables and edemame on a non stick skillet. Add these to the bed of spinach, add your grilled chicken, almonds and avocado. Toss. Use salsa verde as a dressing. Yummy!0 -

I make a huge salad on Sundays and eat it throughout the week. One is:
1 cup shelled edemame
1 cup corn
2 red peppers diced
1 tbsp olive oil
1 tbsp vinegar
bit of lemon pepper
Another is:
Quinoa
Grape tomatoes (or diced tomatoes)
Cucumber
Black olives
Red onion
Feta (special treat, I don't always add it)
Kraft poppyseed dressing
(no idea on amounts on this one, I just add till it looks good!)0 -
romaine lettuce, mushrooms, avocado, red onion, chickpeas or meatless chicken (you can use real), cucumber, pepper strips and light ranch dressing
baby spinach leaves, feta cheese, kalamata olives, cucumber, pepper strips, cheese tortellini, banana peppers with olive oil red wine vinegar lemon juice and oregano0 -
1 cup corn, 1 cup egg plant slices, 3 cups yogurt (plain), 1tsp garlic sauce or crushed garlic.
2 cups toasted pita squares, Put th egg plant and corn all the way down the add the yogurt on top then add pita squares and add more garlic and yogurt sauce on top.
Oh and also add lettuce!

My two go-to side salads that I have with supper every day. I don't use dressing as I can't stand it and these salads are definitely flavourful enough without it.

Green salad: romaine or red-leaf lettuce, cucumber, tomato, onions, mushrooms, beans (black, red, or garbanzo), and cheese. And dressing. (yes, I like everything in my salads).
Pasta salad: bowtie or shell pasta, green onion, olives, artichoke hearts, and Italian dressing.0 -
Jamie Oliver's recipe for chopped salad is to die for. There is something about the combination of the avocado and fresh basil that is just heavenly. I could easily eat the whole recipe in one sitting.

optional dried cranberries
dressing is
1/4 cup balsamic
1/2 extra virgin olive oil
1 crushed clove garlic
1 tsp lemon pepper
1 tsp dried basil
2 tsp honey (I taste it and add more if is still to bitter)
salt and pepper to taste

The veggies, salad dressing, and type of cheese can all be changed to your liking. You can use this recipe just for a guide line or meal idea.
Ingredients
1 cup broccoli florets chopped
1 1/2 cup cauliflower (I had the 3 different colors, it made it really pretty) chopped
1/2 green bell pepper chopped
1/4 cup vidalia onions chopped
1 carrot chopped or shredded
1/2 zucchini chopped
4 oz Cabot Pepper Jack Cheese 50% reduced fat, crumbled
6 Tbls Ken's Vidalia Onion Lite salad dressing
Directions
I put it all in a container w/lid and shake it up and put it in the fridge.
It will last for several days. It made 1 lb 13 oz and a 1/4 of a lb (which is 4 oz or a good half cup measure) is 92 cals. You could get the cals down by using less cheese and dressing but those are what I live for, lol so I use lots. I put that with 1/2 a whole wheat pita and it makes a great lunch or supper for only 167 cals...plenty of wiggle room for some type of meat like rotisserie chicken or you can add pasta instead of the pita.0 -

Butter Lettuce mix (sometimes with added baby spinach if its on sale)
shredded carrot
shredded cucumber
three or four strawberries cut into chunks
or one very small pear cut into chunks
almonds/walnuts/pinenuts (one of those, whatever is on sale)
and top it off with litehouse raspberry vinagrette dressing

Romaine lettuce, croutons, a little shredded mozzarella and Parmesan cheese, and a little creany Caesar dressing. It's tasty and filling enough to be a whole meal. Adding grilled chicken cubes makes it even better.

I just invented this one:
2-3 C lettuce
1/2 C canned black beans, lightly rinsed
3 oz grilled chicken
3-4 sliced sweet mini peppers (I like to sautee them a little first)
2 Tbsp sour cream
toss it all together; the sour cream and the juices from the beans makes an AWESOME, low-cal dressing for the whole salad, and it is just delicious. Try it!0
