    Or I go with above but change dressing to ranch and meat to chicken and add hard boiled eggs & cucumbers

    Though I'm normally not a fan of beets or goat cheese, this salad is SO GOOD:

    A local fancy gastropub makes a version of this salad that's amazing, so when I saw the recipe in this month's Cooking Light I got stoked and made it right away. It's pretty and different.

    Pittsburgh style is the best.

    Bunch of hot french fries, mound of cheese, chicken or steak, ranch dressing...

    if you dig hard enough you can find some lettuce in there too.

    Panera's Fuji apple with apple chips, chicken, apple vinaigrette, nuts, and cheese.

    To make at home, taco salad with grilled chicken and spicy ranch. If I have it in a bowl I use a small corn tortilla and make my own rather than eating a giant fried bowl

    Spring mix/Mixed Greens + Tomato + Strawberries + Blueberries with a Balsamic vinegar/olive oil dressing. Add cucumbers if you want more crunch and you like them.

    Spring greens, Spinach, Romaine lettuce
    A serving of meat or fish
    Slivered honey roasted almonds
    Red, yellow and orange pepper diced or sliced

    Sometimes I add olive oil, craisins, cucumber, a very small amount of grated cheddar cheese or cottage cheese for a different taste depending on how I feel

    I LOVE SALAD!!!! The meat helps it to be a more filling, satisfying meal
    If you are eating it with a regular meal, leave out the meat! :)

    My go to salad is:

    Spring mix greens
    brocoli slaw
    gorgonzola cheese
    dried cranberries and golden raisins
    toasted chopped pecans
    cinnamon pear balsamic vinegar mixed with a little ranch.

    I love it! - My go to is VERY close to this. I add some fresh orange, use toasted pine nuts and Ken's Light Option Raspberry Walnut Dressing. The rest is exactly the same. Greens, broc slaw, blue cheese, dried cranberries.... You have GREAT taste LOL

    Spring greens with chicken, dried cranberries, walnuts, apples, and lite balsamic vinaigrette. Ohhhh so good.

    I like dried cranberries on my spinach and whatever else I have laying around. That combo is pretty win.
  • My favourite at the moment is Broccoli salad..

    4 cups broccoli florets
    1/4 cup chopped red onion
    1/4 cup raisins or cranberries/saltanas
    1/4 cup extra light mayonnaise
    1 Tbsp red wine vinegar
    handful of cashews
    chopped yellow and red capsicum

    Put all ingredients in a bowl...mix mayo and vinegar together pour over salad and mix, chill in fridge before serving. Serves 4

    3 rothbury farm croutons
    Copy cat Olive Garden salad dressing (recipe here http://www.copykat.com/2009/03/29/olive-garden-salad-dressing/ )

    Kind of a different take on Olive Garden salad/Caesar salad :)

    I just made the best salad and have to share..

    Spring salad mix
    Avocado
    Canned Salmon

    Dressing: 1.5 tbsp greek yogurt, lemon juice, dill, and balsamic vinegar!

    So easy and DELICIOUS!
