    Jamie Oliver's recipe for chopped salad is to die for. There is something about the combination of the avocado and fresh basil that is just heavenly. I could easily eat the whole recipe in one sitting. :embarassed:

    My fav is

    baby spinach
    sliced strawberries
    blueberries
    thin sliced red onion
    toasted pecans or walnuts
    crumbled feta cheese

    optional dried cranberries

    dressing is
    1/4 cup balsamic
    1/2 extra virgin olive oil
    1 crushed clove garlic
    1 tsp lemon pepper
    1 tsp dried basil
    2 tsp honey (I taste it and add more if is still to bitter)
    salt and pepper to taste

    it is fast and easy to make....love taking it to a potluck too!

    So Many Veggies Salad
    Sue Solana's original recipe
    The veggies, salad dressing, and type of cheese can all be changed to your liking. You can use this recipe just for a guide line or meal idea.

    Ingredients
    1 cup broccoli florets chopped
    1 1/2 cup cauliflower (I had the 3 different colors, it made it really pretty) chopped
    1/2 green bell pepper chopped
    1/4 cup vidalia onions chopped
    1 carrot chopped or shredded
    1/2 zucchini chopped
    4 oz Cabot Pepper Jack Cheese 50% reduced fat, crumbled
    6 Tbls Ken's Vidalia Onion Lite salad dressing

    Directions
    I put it all in a container w/lid and shake it up and put it in the fridge.
    It will last for several days. It made 1 lb 13 oz and a 1/4 of a lb (which is 4 oz or a good half cup measure) is 92 cals. You could get the cals down by using less cheese and dressing but those are what I live for, lol so I use lots. I put that with 1/2 a whole wheat pita and it makes a great lunch or supper for only 167 cals...plenty of wiggle room for some type of meat like rotisserie chicken or you can add pasta instead of the pita.

    tuna mayo + avocado + tomato + spring onion + cheddar cheese

    This sounds yummy! Though I'd probably add lettuce to it as well for more bulk. I might just have to try it!

    Looking for new salad combos and wondering if anyone has a great one they like.
    I often eat this salad: It's probably pretty high in calories because of the dressing, (havn't eaten it since I started counting calories a month ago) but its soooo yummy.

    Butter Lettuce mix (sometimes with added baby spinach if its on sale)
    shredded carrot
    shredded cucumber
    three or four strawberries cut into chunks
    or one very small pear cut into chunks
    almonds/walnuts/pinenuts (one of those, whatever is on sale)
    and top it off with litehouse raspberry vinagrette dressing

    Mmmmmmmmmm.

    Romaine lettuce, croutons, a little shredded mozzarella and Parmesan cheese, and a little creany Caesar dressing. It's tasty and filling enough to be a whole meal. Adding grilled chicken cubes makes it even better.

    I just invented this one:

    2-3 C lettuce
    1/2 C canned black beans, lightly rinsed
    3 oz grilled chicken
    3-4 sliced sweet mini peppers (I like to sautee them a little first)
    2 Tbsp sour cream

    toss it all together; the sour cream and the juices from the beans makes an AWESOME, low-cal dressing for the whole salad, and it is just delicious. Try it!

    This is my favorite...

    Feta Cheese
    Mandarin Oranges
    A couple walnuts sliced thin
    1 teaspoon dried cranraisins
    shredded radishes
    chick peas
    thinly sliced mushrooms

    1/3 cup fat free cottage dress instead of any type of dressing....:)

    I love the idea of using cottage cheese instead of dressing! Added protein, as well! Great tip! :)

    I love different salads. 2 super easy favourites are:

    Baby spinach, beetroot, feta cheese and pine nuts with caramelised balsamic.

    Or

    Rocket, cooked crispy bacon, sliced pear and shaved Parmesan with a dressing of mayo mixed with balsamic vinegar.

    OMG... I'm going to have to go and make a salad now!!

    Oh and a good one for the winter months is roast pumpkin on baby spinach with feta and walnuts.

    I like romaine w/arugala with goddess dressing, almond slivers, warm edamame beans, sweet salad tomatoes halved and sometimes I throw in chia seeds.

    I like to keep it simple and typically stick to 4 ingredients or fewer. :)

    *Greens, grapes, sunflower seeds, vinegar, sometimes a little olive oil

    *Spinach or arugula, strawberries, balsamic vinegar, sometimes some goat cheese

    *quinoa, strawberries, plain yogurt, basil

    *Pasta (curly or other interesting shapes, preferably a mix of colors), artichoke hearts, pickled beets, olives

    *Bow-tie pasta, lemon juice, basil

    *Couscous, fresh fig, melon, arugula

    *Any fresh fruit, any greens, any seeds, with vinegar and olive oil to taste
