healthy breakfast sandwiches to go (all week long)

    You are my hero :) these will be great to take to work instead of just cereal or whatever they're serving (I work at a school)

    stole this from pinterest! tried this and loved taking them to work with me in the mornings.

    -all natural turkey bacon (6 pieces-one piece torn in half for each sandwich)
    -6 whole wheat english muffins
    -6 low sodium cheese singles (i went with vegan cheese)
    -5 egg whites and 1 whole egg
    -red bell peppers - diced
    -onion - diced
    -whatever veggies you like!

    * preheat oven to 350
    * dice your veggies
    * line your turkey bacon onto a cooking sheet
    * scramble eggs together
    * mix your eggs and veggies (and sprinkle in a little black pepper)
    * grease a muffin pan
    * add 1/4 of the egg/veggie mixture to each muffin slot.
    * cook bacon for 6 minutes before adding the eggs, then cook bacon and eggs for about 9 minutes.
    * let the bacon and eggs cool down a bit, then pat down excess grease off the bacon.
    * slice your 6 english muffins in half and start assembling! cheese, eggs, bacon.
    * wrap each individual breakfast sandwich in wax paper and store in your freezer until you are ready to eat!
    * microwave for 2-3 minutes and enjoy :)

    250 calories
    4g fat
    29g carb
    5g fiber
    22g protein

  • Im kinda confused by how you explained how to do this..

    I would take the muffin tins..line with the bacon..and put the eggs and veggies in it and bake...

    Then just freeze...grab a fresh bun and toast and microwave the muffin bacon and eggs and place in the bun...still yummy

    I will use real bacon too. You don't save much with turkey bacon, and it is no where near as tasty as the real thing.
    I may try Canadian bacon or ham too.
