    I make a breakfast sandwich every morning with the Orowheat sandwich thins, turkey bacon, scrambled egg whites with onion and pepper and Laughing Cow spreadable cheese. It only takes me 5 minutes to make it fresh anyway. I don't think I'd like the bread on it ahead of time.

    stole this from pinterest! tried this and loved taking them to work with me in the mornings.

    -all natural turkey bacon (6 pieces-one piece torn in half for each sandwich)
    -6 whole wheat english muffins
    -6 low sodium cheese singles (i went with vegan cheese)
    -5 egg whites and 1 whole egg
    -red bell peppers - diced
    -onion - diced
    -whatever veggies you like!

    * preheat oven to 350
    * dice your veggies
    * line your turkey bacon onto a cooking sheet
    * scramble eggs together
    * mix your eggs and veggies (and sprinkle in a little black pepper)
    * grease a muffin pan
    * add 1/4 of the egg/veggie mixture to each muffin slot.
    * cook bacon for 6 minutes before adding the eggs, then cook bacon and eggs for about 9 minutes.
    * let the bacon and eggs cool down a bit, then pat down excess grease off the bacon.
    * slice your 6 english muffins in half and start assembling! cheese, eggs, bacon.
    * wrap each individual breakfast sandwich in wax paper and store in your freezer until you are ready to eat!
    * microwave for 2-3 minutes and enjoy :)

    Nutrition:
    250 calories
    4g fat
    29g carb
    5g fiber
    22g protein

    Thank you, thank you, thank you. I tried this today but spiced it up a little with Tastefully Simple Simply Salsa dry mix in the egg mixture and low sodium 3 Pepper Colby cheese. It is a few more calories (16) but what a fantastic idea! I loved it. I am keeping the muffin separate and toasting each day but they are still very convenient!

    I really need to write this recipe down, I keep having to search for this topic every time I make them. I toast my english muffins first now, and make sure to really squeeze the egg patties with paper towel before assembling.

    apple wood smoked thick cut pork bacon + an extra 10 minute on the treadmill :tongue:
