    i love whole eggs. i used to be an egg white person, but egg whites have no flavor, and don't taste as wonderful.

    The yolks are a very healthy thing to eat. The lecithin contained in the yolk is VERY good for you and there is vitamin A and other nutrients and antioxidants in the yolks as well. It is a myth that eating egg yolks will increase your cholesterol levels. Scientists have known for a very long time that eating cholesterol does not raise blood levels of cholesterol. Your liver makes far more cholesterol than you could possibly eat. Those who do not eat yolks may be going low-fat rather than being worried about the cholesterol. I do not approve of low-fat diets for obese folks because it pushes more calories into carbs than would be good for me (or others with blood sugar issues) but for those of normal weight and who are exercising a lot, it is essential to fuel their exercise. "Different strokes" for different purposes.
