    Love Quinoa and search for a new recipe to try weekly.
    An easy and much loved is just sautee onions, mushrooms, garlic. Boil quinoa in chicken broth instead of water. When done mix with the sauteed items. Very yummy and easy. Great sidedish with grilled chicken.

    Another really simple one...

    Cooked quinoa mixed about 1:1 with Bush's chili beans (kidney beans with seasoning). Just like that tastes pretty good hot or cold. I also like adding kernel corn, onions and shredded chicken for a more complete dish.

    Broccoli Quinoa Casserole! I make this every few weeks. It also works to freeze some to thaw out later. I make the below with less cheese and greek yogurt in place of mayo. It's still awesome. I have it down so this recipe makes 4 servings and each serving is only about 252 calories!

    I will have to ask my wife, they have been eating that for thousands of years. She has been eating it all her life. She is from South America where they grow it.

    Mexican chicken stew with quinoa and pinto beans - so yummy!

    Fry onions and peppers for a few mins until softened. Stir in chipotle paste for a minute, followed by tomatoes. Add up to a tomato can-full of water to cover the chicken and bring to a gentle simmer. Add the chicken breasts and gently simmer, until the chicken is cooked through.

    Bring a large saucepan of water to the boil with the stock cubes. Add the quinoa and cook for 15 mins until tender, adding pinto beans for the final min. Drain well and stir in the coriander and lime juice, then season as desired.
    Shred each chicken breast using two forks, stir back in and serve, maybe with greek yoghurt.

    What I am eating RIGHT NOW ( or intermittently as I type)

    Quinoa I seasoned with a bunch of stuff but you could just use Taco Seasoning from a packet
    Chickpeas I seasoned with a similar bunch of stuff that you could also use a packet for (plus some almond milk) done on the skillet
    Some "Vegan Queso" I made with a little earth balance butter, chickpea flour, nutritional yeast and salsa (sorry, I don't measure stuff)
    sauteed Onions, peppers, and portabella mushrooms
    Lettuce
    Salsa
    1/4 avocado
    (Plus you can add but I didn't have fresh tomato, red onion, peppers)

    Green Chili Cheesy Quinoa Casserole
    Serves 8

    Olive oil spray
    3 cups cooked quinoa
    16 ounces non-fat plain Greek yogurt OR sour cream
    1/4 cup milk of choice
    2 cups shredded cheddar, divided
    1 cup finely chopped onion
    4 ounces chopped green chiles
    1 jalapeno pepper, seeded and diced
    1 teaspoon ground cumin
    ½ teaspoon sea salt
    ¼ teaspoon fresh ground black pepper

    Preheat oven to 350 degrees. Spray an 8 inch baking dish with olive oil spray.

    In a large bowl combine yogurt and milk. Add quinoa, 1 1/2 cups cheese, onion, green chiles, jalapeno, cumin, sea salt and fresh ground black pepper. Top with remaining 1/2 cup cheese.

    Bake for 30 minutes.

    May be frozen prior to baking. Thaw dish in the refrigerator. Bake for 30 to 40 minutes, until heated through.

    Calories 242, Fat 10.9g, Carbohydrates 18.7g, Protein 16.6g, Cholesterol 34mg, Sodium 378mg, Fiber 1.7g, Sugars 4.1g

    Onion Quinoa Bites
    4 servings 274 calories

    2 cups cooked quinoa
    1 large onion, chopped
    ¼ cup cheddar cheese
    ¼ cup chopped chives
    ¾ cup flour
    ¼ teaspoon cayenne pepper
    1 teaspoon sea salt
    2 eggs
    1 tablespoon lemon juice
    Canola oil, for cooking

    1. In a medium bowl combine quinoa, cheese, onion and chives. Add flour, cayenne pepper and sea salt. Toss until coated.
    2. Beat eggs and lemon juice together. Combine with quinoa mixture and mix well.
    3. Form into small balls and refrigerate for 15 minutes.
    4. Heat a large skillet to medium heat and coat well with oil. (Make sure you allow your skillet to get warm before adding quinoa) Cook for 5 to 7 minutes per side or until brown.

    To make the dipping sauce combine 1/2 cup Greek yogurt or vegan sour cream with 2 teaspoons minced garlic (more or less to taste), 2 tablespoons chopped fresh chives, 1/2 teaspoon sea salt, 1/4 teaspoon fresh ground pepper and 1/8 teaspoon cayenne pepper (optional). Mix well and refrigerate until ready to serve.

    Cheesy Quinoa Bites
    Makes 28 bites

    2 cups cooked quinoa
    2 large eggs
    1 cup shredded carrot
    2 stalks green onion, diced
    2 cloves garlic, minced
    1/4 cup chopped fresh cilantro or parsley
    1/2 cup grated Parmesan cheese
    2 Tbs all-purpose flour
    1/2 tsp seasoning salt
    1/4 tsp freshly ground pepper

    1. Preheat oven to 350 degrees.
    2. Mix together quinoa, carrot, egg, green onion, garlic, cilantro, cheese, flour, salt and pepper.
    3. Distribute mixture into a greased mini muffin tin, filling each cup to the top (1 heaping Tbs each).
    4. Bake for 15-20 minutes.
    Calories 130 for 4 bites.

    Spinach Parmesan Quinoa Bites
    Makes 30 bites

    2 cups cooked quinoa
    2 large eggs
    2 cups baby spinach leaves, chopped
    1 cup diced onion
    2/3 cup grated Parmesan cheese
    1/4 cup Panko breadcrumbs
    1 clove garlic, minced
    1 tsp Italian seasoning
    1/4 tsp freshly ground pepper
    Dash of sea salt

    1. Preheat oven to 350 degrees.
    2. Mix all ingredients together.
    3. Distribute mixture into a greased mini muffin tin, filling each cup to the top (1 heaping Tbs each), and press down gently to compact.
    4. Bake for 15-20 minutes.

    Ham & Cheese Quinoa Bites
    Makes 3 dozen bites

    2 cups cooked quinoa
    2 eggs
    1 tsp minced garlic
    1/2 cup diced onion
    1 cup finely diced ham
    1 1/2 cups shredded sharp cheddar cheese
    3 Tbs fresh chives, chopped
    1/2 cup panko
    1/4 tsp each of salt and pepper

    1. Preheat oven to 350 degrees.
    2. Mix together all ingredients.
    3. Distribute mixture into a greased mini muffin tin, filling each cup to the top (1 heaping Tbs each) and press down gently to compact.
    4. Bake for 15-20 minutes.

    Chicken Cordon Bleu Quinoa Bites
    Makes 36 bites

    2 cups cooked quinoa
    2 large eggs
    2 stalks green onion, diced
    1 cup shredded Swiss cheese
    2 tsp minced garlic
    1 tsp dried thyme
    1 tsp dried parsley
    3/4 cup finely diced ham
    3/4 cup finely chopped cooked chicken
    1/2 tsp seasoning salt
    1/4 tsp ground pepper

    1. Preheat oven to 350 degrees.
    2. Mix all ingredients together in a medium mixing bowl.
    3. Distribute mixture into a greased mini muffin tin, filling each cup to the top (1 heaping Tbs each), and press down gently to compact.
    4. Bake for 15-20 minutes.

    Cilantro Lime Quinoa
    Makes 4 ½ cups

    1 ¼ cups uncooked quinoa
    2 ½ cups water
    ¾ tsp salt
    1 TBSP lime zest
    3 TBSP fresh lime juice
    2 TBSP chopped fresh cilantro
    1 ½ TBSP olive oil
    ½ tsp salt
    ¼ tsp freshly ground black pepper
    Rinse quinoa according to package directions. Combine quinoa, water and salt in saucepan over medium-high heat. Bring to a boil, reduce heat and simmer, covered, 20 minutes. Transfer to a large bowl.

    Combine quinoa and remaining ingredients.

    Quinoa (Mac) & Cheese
    4 servings

    1 ½ cups cooked quinoa
    2 eggs
    1 cup milk. I used skim
    1 ½ cups shredded cheddar cheese
    Panko

    Preheat oven to 350. Beat eggs and milk, then add quinoa and cheese. Spray a 9 x 13 casserole w Pam or whatever. Spread mixture in casserole and sprinkle Panko on top. Bake for 30 min.
    309 calories, 18g fat, 22g carbs, 19g protein.
    Add veggies if you want!

    Pork-fried Quinoa
    2 large or 4 small servings

    1 cup quinoa
    Salt to taste
    1 1/2 cups cold water
    1 tbsp vegetable oil
    1 cup diced smoked ham
    1/2 cup diced peppers
    1/2 cup sliced green onions
    3 cloves garlic minced
    1 tbsp seasoned rice vinegar
    1 or 2 tbsp soy sauce, or to taste
    Sriracha, or any hot sauce to taste
    Toasted sesame seeds to taste

    Rinse quinoa in cold water for 1 minute, then put in saucepan. Add cold water and pinch of salt. Put on high heat, cover and reduce heat to simmer for 15 minutes. Take off heat and let sit for 5 minutes. Fluff with fork. Dice ham, green onions, peppers. Add oil to skillet; add ham, onions and peppers. Cook for 5 minutes, add minced garlic and turn off heat. Add quinoa to frying pan and cook for 2 minutes and finish with rice vinegar, soy sauce and sriracha and green onion tops until heated. Top with sesame seeds.

    Quinoa with Sausage and Peppers
    8 servings

    1 14 ½ oz can reduced-sodium chicken broth
    1 cup quinoa, rinsed and drained
    ¼ cup cider vinegar
    2 TBSP stone-ground mustard
    2 tsp honey
    3 medium yellow and/or red sweet peppers, cut into bite-sized pieces
    1 medium sweet onion, cut into thin wedges
    2 12 oz pkgs cooked Italian chicken sausage links, halved lengthwise and sliced crosswise
    1 cup shredded reduced-fat cheddar cheese or crumbled reduced-fat feta cheese (4 oz)

    In slow cooker combine down through honey. Add peppers, onion and sausage. Cover and cook on low for 4-5 hours or high for 2-2 ½ hours. Stir gently and top each serving with cheese. 279 cal

    Black beans and quinoa - first recipe ever with it. My husban said I can make it every night. Supper easy and can be used as a main meal.

    I've made all but 2 of these so far. SO GOOD. Especially the strawberry/feta one, I added mint to it.
