I tried this today and it is very good. I used WW buns and topped it with cole slaw. Delish!
The only thing I didnt' quit like was that mine came out too salty and watery. I had to thicken the sauce up and next time, I will only use 1/2 packet ranch and 1/2 bottle sauce reduce the salt, which will also reduce the calories. Thanks for sharing!0 -
I came up with a recipe thats under 600 calories. my friend use to make me this all the time except everything was mixed together and the chicken was cut in pieces!! Really easy and "at home" products too!
1 Chicken Fillet Breast
Marinade:
3 tbsp Cider Vinegar
20 ml Oyster Sauce
50 grams light Mozarella Cheese
90 grams or 1/2 pcket Coles 4 Leaf Salad
5 Cherry Tomatoes
1 or 2 Toast (Bread toasted or optional: Bake in oven)
1. Prepare the Marinade:
Mix the Cider vinegar with the Oyster sauce
2. Soak the Chicken:
Soak the chicken in the marinade
(I brush the marinade over the chicken or optional: Soak for 30 minutes or so)
3. Preheat oven (desired setting: roughly 150-200 C/fan forced)
4. Cook chicken fillet for approximately 10-20 minutes
Then pull out and add the Mozzarella cheese on top
and place back in oven until cooked
5. Toast your bread
(preferably nice and brown e.g croutons)
6. While oven is heating prepare salad:
Add half packet of 4 leaf salad mix (any salad mix is okay) into a bowl
Add cherry tomatoes and toss
Once Toast has cooled down chop in nice small pieces and add to the salad as well.
Toss
7. Serve
Tip: You can use the cider vinegar as the salad dressing
or add French dressing (NOTE: could change calorie count!!)

i made this over the weekend. I'm eating it now. Very Yummy. It's very spicy and tangy. I've been puting over salad greens with some fresh corn, canned black beans and cilantro. The corn adds a sweetness i like.0

I've made this, I love buffalo chicken, and here are my suggestions...
1) You don't need the ranch mix. It is unnecessary for flavoring and just adds empty calories and more salt.
2) Use only a 1/4 of the bottle, and add water. When the chicken is all done and you take it out and shred it, just add a little more hot sauce in the bowl you are shredding the chicken in. You'll get the thickness back and you won't waste it, not to mention less salt all around!
3) I put mine over a salad with romaine lettuce, red onions, yogurt blue cheese dressing (35 calories), and 1/2 oz of blue cheese crumbles. What a good dinner it makes!!!0 -

Costco has some 80 calorie mini pizza crusts. (tomato basil is my fav!) you could top with the shredded buffalo chicken and enjoy! Cut them into fourths for parties! YUM! Thanks for the suggestion!0
