Laughing cow cheese.....what to do with them?

Melt them in jacket potatoes, 10mins before the potato is due to come out of the oven put half a cheese in, then no need for butter or toppings, lovely with salad or beans X0

I'm sure you have heard of her.... The Hungry Girl? Well she has some REALLY good cookbooks (website too!) and she uses laughing cow for pretty much everything that calls for cheese!

I used them as a spread on sandwiches or wraps. On occasion, when I am feeling veggies, I'll put it on celery, broccoli, etc. The Light Creamy Swiss flavor is 35 cals. They're all pretty tasty.0

I spread mine on a slice of homemade banana bread for breakfast yesterday. Typically I'll spread it on rye toast or pita bread. I'd be interested to hear some more unconventional uses0

I just had a sample at Trader Joe's. It was their corn tortilla seasame flats, broken into smaller pieces, with the garlic and herb laughing cow cheese and this pinot grigio infused salami. It was so awesome I bought everything on the spot. I highly recommend! And the flats are fairly low carb, 18 grams for 3, if you are watching carbs!0

In scrambled eggs! Spread it on apple slices. Put it on a toasted bagel or english muffin with tomato slices.0

I posted this in another thread about Laughing Cow, but the same applies; pop it inside large mushrooms and sprinkle some herbs and Parmesan on top. Then bake. Delicious.0

I spread it on ham slices, and then roll them up and cut them up in salad. SO GOOD, can't even believe it!0

"Take 1 tablespoon grated parmesan cheese and 1 wedge laughing cow swiss cheese and mix in 1 cup cooked quinoa when it's still hot and you have a nice mac and cheese substitute" - Somebody in another thread.
I am going to try this asap. At our house the plain ones go on sandwiches instead of mayonnaise, the chipotle ones get mixed with reduced calorie mozzarella and go in burritos instead of fattier cheeses, the sundried tomato ones get mixed into hot pasta instead of alfredo sauce or lots of parmesan, and the french onion ones get fought over for every conceivable use from crackers to toast to spread on warm flat bread to be so delicious it would make the angels weep.
edit: This is truly the greatest of threads. Keep telling us what you do with those delicious cheesy wedges, please!0 -
My favorites are:
'Light Garlic & Herb' spread on halved cucumbers
'Swiss' melted with Shirataki noodles, broccoli & cubed chicken (makes for low-cal version of mac & cheese!)
and simply broccoli and cheese, which you can do with any flavor!0 -
Use a vegetable peeler to make noodle-like slices of zucchini. Cook the zucchini in a skillet with about 1/3 cup of chicken broth. After a few minutes, add a wedge or two of Laughing Cow cheese and cook until the cheese is melted into a thick sauce. Season with salt and freshly ground black pepper.0

I love to toast a pita in the oven with light olive oil when you take it out put laughing cow cheese on it and top with a veggie omelet in the morning for breakfast :-) It is also great on celery.0

Throw them away and eat real cheese? Sorry, I had to. Seriously though, those things are kind of gross. However, I know people like to put them on crackers, bread, on sandwiches instead of mayo, etc.0

Usually over pasta or spread on a sandwich or crackers. As a substitute for other cheeses in recipes when you want to keep cals/fat down. Mix it in potatoes or mashed couliflower. Last night I stuffed chicken breast with a mixture of sauteed garlic, onion, spinach and a light garlic and herb wedge and baked it. YUM!0

i was actually thinking of making a pasta chicken dish with laughing cow cheese tonight for dinner.....I plan on sauteing onion, red bell peppers, mushrooms and zuchinni add chicken strips and some sundried tomatoe laughing cow cheese with some garlic, salt and pepper and maybe a little hot sauce I might also add in some baby corn and mix in some fettuccine noodles...I haven't tried it before but it sounds yummy0 -
I like the blue cheese version on celery sticks with a dash of sriracha!0

I cut a slit into the side of a chicken breast, amking a little pocket, and I stuff some spinach and a laughing Cow wedge in there. Bake as usual, so totally yummy!0

Beat me to it. We've cut them out of our household after reading a little too much on their industrial manufacture. Real cheese, here.0 -
i shread some grilled chicken put it in a slowcooker add a jar of salsa break up or slice a wedge of the laughing cow, toss it in with the chicken and salsa . heat on low in the slowcooker till its all melted together. take a whole wheat tortilla shell add the chicken and salsa mix roll up tortilla and enjoy. you can add lettus or any other veggies if you like. or you can just spoon the mixture over a bed of lettus ad omitt the whole wheat tortilla shell. either way its a healthy meal . the salsa as no calories .0
