Fluffy Protein Pancakes!!!!

These are by far the best protein pancakes I've ever had!!!! Not flat and gross like most I've tried!

1 scoop vanilla protein powder
2 egg whites
1/4 cup unsweetened almond milk
3/4 t. baking powder
1/2 t. cinnamon
2 stevia packets
1/2 t. vanilla

Directions:
mix all ingredients in a bowl. Stir just until they are mixed well. do not overstir.

Pour 1/3 of the batter into skillet. cook as you would with other pancakes.

I used sugar free syrup on mine. You could top with fruit, etc...

I'm thinking of making up quite a few to have ready in the mornings! They are that good!!!!

Makes 3 pancakes

125 calories
4 g carbs
2 g fat
23 g protein
3 g sugar

This could all vary depending on your protein powder.

Sounds good! How much is in a scoop of protein powder? Mine doesn't come with a scoop.

Thanks I'm going to try this. I use Walden Farms blueberry syrup. It doesn't have any sugar and is suppose to be calorie free.

Thanks. I actually made this and used 5 heaping tbsps to get it to the right consistency. It was pretty good, I had to sub baking soda for baking powder and didn't put in enough stevia but next time I know what to do. Had a nice "carby" texture to it.

this is my fave... I add protein powder and mini dark choc chips (sometimes)
    my kids LOVE them.

6 egg whites ( I used egg whites from the carton)
    1 cup oatmeal
1 cup cottage cheese ( I used low fat)
2 tsp. sugar ( I used my cranberry bog honey)
    1 tsp. vanilla extract
    1 tsp. cinnamon
Into the blender it all goes, blend and pour by the 1/4 cup full onto a hot griddle or cast iron pan. Wait for the bubbles to appear and flip. To save some calories I did not pour the maple syrup over the pancakes, but instead poured a few tablespoons in a tiny dish to dip each fork full in.

I will try this recipe using 1% cow milk and without the cinnamon. Something new for a Sunday breakfast. Thank you!
