Oil - Olive, 1 tablespoon 119 0 14 0 0 0
I start by browning the sausage by scrambling it or roll it into small balls and brown it, Add garlic, onions and peppers. Cook until they just start to sweat. Set aside. In the crock, add canned tomatoes (do not drain), tomato sauce and olive oil. Add 1 cup water. Add 1 cup of rice. Stir in the sausage and veggies. Give it a stir and cover. Cook on low 6-8 hrs.
Makes 4 servings, calories 388, carbs 56, fat 11, protein 17, fiber 7, sodium 1018
**to cut down sodium, use no-salt canned tomatoes and sauce, or about 4 cups fresh diced tomatoes.

Honey Garlic Chicken Slow Cooker Recipe
Ingredients:
3-4 chicken breasts (mine were frozen)
1 tablespoon minced garlic
1 teaspoon dried basil
1/2 cup soy sauce
1/2 cup ketchup
1/3 cup honey
Directions:
Place the chicken into your cooker.
Mix the rest of the ingredients and pour on chicken.
Cook on low for 6 hours or high for 3-4.0 -
Mexican Crockpot Creamy Chicken
Ingredients:
1lb. Boneless Chicken Breasts (I put mine in frozen)
1/2 cup of salsa
1 bag frozen sweet corn
1 can of black beans, drained and rinsed
1 can of Rotel Tomatoes with Green Chilies
Chili Powder
S&P
1/2 block of cream cheese
1 small onion diced
Directions:
Put chicken in Crockpot and cover with all ingredients except for cream cheese.
Add in chili powder and S&P.
Cook for 3-4 hours on high, 7-8 hours on low.
Shred the chicken and mix it all in along with the cream cheese until melted.
Let cook for another 15-20 minutes until heated through.
Serve over rice or in tortillas as tacos/burritos.

Ropa Vieja
1 2-4lb roast
1 lg yellow onion
1 green bell pepper
1 red bell pepper (sometimes I use 2 green ones to save $--less color but just a good)
2 cloves of garlic-minced
1 28oz can whole or diced tomatoes (drain the juice)
3 tbsp tomato paste
1/4 cup sofrito (if your grocer doesn't carry pre-packaged Sofrito you can find an easy recipe online to make your own. Just google it.
1 1/2 tsp ground cumin
1 tsp dried oregano
1 bay leaf
1/2 tsp kosher salt
Put it all in the crock pot on low for 10 hours or high for 5 hours. Easy and delicious!0 -

Cashew Chicken
6 boneless, skinless chicken breasts
2 tablespoons butter
1/4 cup chopped green onion
1 cup sliced mushrooms
1 can (103/4 oz) condensed cream of mushroom soup, undiluted
1 cup sliced celery
1 1/2 tbsp soy sauce
1/2 cup cashews
hot cooked rice
combine chicken, butter, green onion, mushrooms, soup, celery, soy sauce and cashews in crock pot, cover cook on low 6-8 hours or high 4-6 hours until done. Serve over rice.0 -
Lemon Pudding Cake
3 eggs-separated
1tsp grated lemon rind
1/4 cup lemon juice
3 tbsp butter-melted
1 1/2 cups milk
3/4 cup sugar
1/4 cup all-purpose flour
1/8 tsp salt
In a bowl, beat egg whites until stiff peaks form. Set aside. Beat egg yolks in a bowl. Blend in lemon rind, lemon juice, butter and milk. In a separate bowl, combine sugar, flour and salt. Add to lemon mixture, beating until smooth. Fold into beaten egg whites. Spoon into slow cooker/crock pot. Cover and cook on high 2 to 3 hours. Serve with a spoon from crock pot.0 -
WW crockpot lasagne..
1 lb ground 93percent lean beef
1 small chopped onion
1 clove garlic minced
28 oz canned crushed tomatoes
15 oz canned tomatoe sauce
1t salt
1t oregano
1/2t basil
1/4t dried red pepper flakes
1 c part skim ricotta cheese
1.5 cups shredded part skim mozzarella
6 no cook lasagne noodles
1/2 cup shredded Parmesan or Romano cheese
Brown and crumble beef and seasonings in skillet,add tomatoes and simmer. In meantime stir together ricotta and 1 cup of mozzarella. Spoon 1/3 beef mixture in crockpot, break 3 lasagnee noodles and layer over beef mixture,top with 1/3 ricotta mixture . Repeat layers and top with beef layer .. Cover and slow cook low setting 4-6 hours. Remove cover and sprinkle with 1/2 cup mozzarella and Parmesan and let sit 10 minutes. You can also add veggies like zucchini or eggplant and mushrooms.
1/6 serving is 10 points plus which is approximately. 400 calories.
