I have a whole PDF book that has lowfat crockpot recipes. It also has WW points. High in protein and low in fat and cals.......
1 lb boneless chicken
16 oz salsa
1 can (15 oz) black beans, rinsed
1 can corn
Put in crockpot on high for 4 hours, sprink with shredded cheddar cheese (2% block)......serve over rice or quinoa....taste great.0 -

Verde Pork
1 pork loin
1 jar of salsa verde
cumin powder and seeds to taste (I use a lot)
rub thawed pork loin with cumin powder and seeds
place in crock pot with 1/2 cup of water
add 1/2 jar of salsa verde (I like World Table from WalMart)
cook 4-6 hours on low
Take out pork loin and shred, reserve about 1 cup of the sauce from the pan after you skim the fat out.
Add the pork back in the crock with the reserved liquid, add the other 1/2 of the jar of salsa verde.
This is so good by itself, over beans, with corn tortillas, over rice, quinua, or couscous. It's so easy to make for a crowd too! If you don't eat pork, you can substitute chicken breasts.0 -
