I tried this one that I found here on the board last week:

    Buffalo Ranch Crockpot Chicken

    1lb chicken breast (bonless/skinless)
1 pkg Hidden Valley Ranch Dip/Dressing mix
1 bottle Franks Hot WIng Sauce (ZERO CALORIES)

Put the chicken in the crock pot, sprinkle the ranch on top and pour the Franks Hot Sauce on top (as much as you want)

I put it on for 4 hours..

Then I turned it into wraps usin FlatOut (its like a flatbread) (90 calories, 9 grams of protein and 9 grams of dietary fiber)...

Added lettuce, tomato, wrapped it up.

Um, what could possibly make you think that an entire bottle of sauce has 0 calories? A simple internet search tells me that 1 tablespoon has between 5 and 23 calories (conflicting info, but neither say 0) and 460 mg of sodium. I don't have a bottle of it to read what it actually contains, but common sense will tell you that unless it's pure water and artificial sweetener, it's going to have some cals. Let's use our powers of reasoning here, people, and not wishful thinking!

ETA: labeling laws let companies put 0 for some items if they fall under a certain number, so if you are eating one serving, the fat/cals may be negligible. But if you eat the whole bottle, those negligible cals add up. Canola oil is the fifth ingredient in this product, so it is going to add up when you're eating more than a tablespoon.

Undoubtedly the best chicken tacos you'll ever have are made in a crockpot.

You'll need 1 or 2 lbs of chicken (I used thighs; they're cheaper), 1 jar of salsa and a packet of taco seasoning. Dump all three ing. into crockpot. Stir, if you're into that sort of thing. And then set your timer to low. You can do this with frozen or thawed chicken.

    Here's the original recipe: http://mychocolatetherapy.blogspot.com/2012/01/crockpot-chicken-tacos.html

I dare you not to stand over the crockpot, eating it straight outta-the-pot with a fork!!
I have the same recipe with beef, try adding a few bell peppers sliced and an onion, sliced. The beef takes longer but they should still be cooked .

Here's one of my favorite crock pot recipes:

    Recipe: Curried Chicken with Peaches

Makes 4 servings (342 calories per serving)
    Preparation Time: 5 minutes

    Ingredients:
    · 4 Chicken Breasts
    · 1/8 teaspoon each salt and pepper
    · 1 can (29 ounces) sliced peaches
    · ½ cup Chicken Broth
    · 2 tablespoons butter, melted
    · 1 tablespoon dried minced onion
    · 2 teaspoons indian curry paste
    · 2 cloves of garlic, minced
    · ¼ teaspoon ground ginger
    · 3 tablespoons cornstarch
    · 3 tablespoons cold water
    · ¼ cup raisins

    Directions:

Place Chicken in slow cooker, sprinkle with salt and pepper. Drain the peaches reserving ½ cup juice, set peaches aside

In a small bowl, combine the broth, butter, onion, curry, garlic, ginger, and reserved juice; pour over chicken. Cover and cook on low 3-4 hours or until chicken juices run clear.

Remove chicken and keep warm. In a small bowl, combine cornstarch and water until smooth; stir into cooking juices. Add raisins. Cover and cook on high for 10-15 minutes. Stir in peaches; heat through. Serve over chicken.

I've been working on meals that I can make in great quantity and a low price so that no only can I pull meals quickly from the freezer, but I know what to buy when it's on sale. I try to combine a meat with a bean/lentil to keep protein high, fat content low, and costs down. Generally, I aim to spend about $1 on canned goods and $2/lb on meat/beans. I live in Canada so I don't know if the pricing will be the same. I also buy things in bulk (like rice, onions and carrots).

Here are some cheap recipes that I use regularly (keep in mind that you can alter the spices to match your flavour preference):

    Pork Stew - 14 portions - 1 cup each

    Chopped Onions 2 bulbs
    Chopped celery 2c
    Chopped carrots 2c
Diced Tomatoes 796ml can 4 cans
Canned Peaches and Cream Corn 1 can
    Canned Black Beans 1 can
    Garlic Powder 2 T (optional)
    Cumin 1 T
    Coriander 1T
    Oregano 1T
    Paprika 2 T
    Pork Loin roast/stewing meat 1kg

    Crockpot Chili: 10 adult portions

    Ground Beef/turkey/pork 1 lb
    Red Kidney Beans 1 can
    Diced Tomatoes 796ml/can 2 cans
    Onions chopped 3c
    Carrots choped 2c
    Celery chopped 2c
    Cumin 1T
    Cayenne 2t (optional)
    Paprika 1T
    Oregano 1T
    Garlic Powder 1T (optional)

    1. Brown beef in a pan and drain excess oil.
    2. Add all ingredients into a crockpot on high.
    3. Cook until well combined - 2 to 3 minimum, 6-8 hours is better.
    4. Taste and adjust spices. Serve with rice.
    5. Freeze meal portions.

    Mexican Crockpot Creamy Chicken

    Ingredients:
1lb. Boneless Chicken Breasts (I put mine in frozen)
    1/2 cup of salsa
    1 bag frozen sweet corn
1 can of black beans, drained and rinsed
1 can of Rotel Tomatoes with Green Chilies
    Chili Powder
    S&P
    1/2 block of cream cheese
    1 small onion diced
    Directions:
Put chicken in Crockpot and cover with all ingredients except for cream cheese.
Add in chili powder and S&P.
Cook for 3-4 hours on high, 7-8 hours on low.
Shred the chicken and mix it all in along with the cream cheese until melted.
Let cook for another 15-20 minutes until heated through.
Serve over rice or in tortillas as tacos/burritos.

    Makes 6 Servings, 181 Calories
