    I like to make chicken chili

    3 to 4 boneless skineless chicken breast -chopped into cubes or short strips
    1 can whole kernel corn in water
    1 can chili beans
    1 can roasted diced tomatoes (trader joes makes really good fire roasted ones!)

    toss all in crock pot check on it every hour or so for a couple of hours to let stew and chicken get all cooked and then cook for the last 30-40 min with the top off to let the extra waters evaporate.

    Its really tasty and great for healthy quick lunches for the week :)

    I make chicken noodle soup all the time!

    8-10 oz chicken
    1 bundle green onions
    1 can low sodium chicken broth
    3 cups water
    1/2 cup pasta
    2 cups spinach

    I season with only black pepper and garlic powder. It's 3g fat and 30g protein per bowl. (Makes 2 big bowls.) It's also really great with some shredded cheese mixed in, if you wanted more fat and protein.
    I tried this and the kids loved it. My son took leftovers to the first day of school!

    Undoubtedly the best chicken tacos you'll ever have are made in a crockpot.

    You'll need 1 or 2 lbs of chicken (I used thighs; they're cheaper), 1 jar of salsa and a packet of taco seasoning. Dump all three ing. into crockpot. Stir, if you're into that sort of thing. And then set your timer to low. You can do this with frozen or thawed chicken.

    Chicken taco filling
    1 lb boneless chicken breasts (can be frozen)
    1 can of diced tomatoes in jalepenos
    1 can of black beans (drained)
    1 packet of low sodium taco seaoning (mixed with 1/2 cup of water)

    Cook on low 6 to 8 hours
    shred chicken
    For my family I serve with low fat cheddar cheese, light sour cream, quacamole, taco sauce, fresh tomatoes
    You can:
    serve in tortillas
    serve over baked tortilla chips
    serve over salad

    Very delish!!
