Wow! Thanks you all. With all of these great recipes I can try two or three new dishes each week. Actually, I can cook good, healthy food at home and stop eating out so much.

  • Put 1-2 pork tenderloins in your crockpot and cook (my crockpot cooks really fast - so I can't advise). When it's cooked, drain it (bye, bye fat!). Then shred it and add a jar of Stubbs BBQ sauce - very low on sugar for BBQ sauce. Leave them for 30 minutes or so and you've got shredded pork without the fat. I make a vinegar-based coleslaw to go with it (white vinegar, a pinch of sugar, a tbsp low cal mayo + salt + pepper) You can serve with whole wheat buns or not.

I often throw some frozen chicken breasts, baby carrots and then a can of low fat cream soup, or even hot chicken sauce(canned)
I put it all in before church, and when we get home I throw in a head of brocolli, after about a half hour, we eat it up served with salad, mashed potatoes, rice...whatever :)

Right now I am trying a new recipe in my crock pot for split pea soup. Smells delicious. I haven't tasted it yet but this is it:

    Layer

    1 lb dried split peas
    2 cups diced ham
    3 carrots diced
    1 medium onion, diced
    2 cloves garlic minced
    1/2 tablespoon salt
    1 tsp pepper
    1 bay leaf
6-8 cups of water or chicken broth (I used 4 cups 99% Fat Free Broth and the rest water

And cook on low for 8-10 hours. I hope I remembered everything. I entered the recipe under my recipes on this site, so I could make it again if its good. Smells wonderful
