    That greek chicken sounds great!
    Also, salsa chicken.

    2-3 boneless skinless chicken breasts
    1 cup salsa
    1 can cream of mushroom soup

    Cook on high for 4 hrs or on low for 6-8
    Delicious and low calorie! Best served on rice or just as an entree with anything else.

    Chicken Tortilla Soup-so good! I add black beans :)

    1 pound shredded, cooked chicken
    1 (15 ounce) can whole peeled tomatoes, mashed
    1 (10 ounce) can enchilada sauce
    1 medium onion, chopped
    1 (4 ounce) can chopped green chile peppers
    2 cloves garlic, minced
    2 cups water
    1 (14.5 ounce) can chicken broth
    1 teaspoon cumin
    1 teaspoon chili powder
    1 teaspoon salt
    1/4 teaspoon black pepper
    1 bay leaf
    1 (10 ounce) package frozen corn
    1 tablespoon chopped cilantro
    7 corn tortillas
    vegetable oil

    Directions

    1. Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker. Pour in water and chicken broth, and season with cumin, chili powder, salt, pepper, and bay leaf. Stir in corn and cilantro. Cover, and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours.
    2. Preheat oven to 400 degrees F (200 degrees C).
    3. Lightly brush both sides of tortillas with oil. Cut tortillas into strips, then spread on a baking sheet.
    4. Bake in preheated oven until crisp, about 10 to 15 minutes. To serve, sprinkle tortilla strips over soup.

    Albondigas soup

    1/2 pound ground chuck
    1/2 onion-minced
    2 cloves garlic-minced
    1/4 cup instant rice-uncooked
    1 egg
    salt and pepper to taste
    4 ounces chopped green chiles-canned, drained
    1 carrot-shredded
    14 1/2 ounces stewed tomatoes-canned
    4 cups hot water
    2 cups lowfat beef broth-or water
    1 teaspoon dried oregano
    2 tablespoons chopped fresh parsley-or cilantro

    In a bowl, combine beef, onion, garlic, rice, egg, salt and pepper to taste. Form 1 1/2 inch meatballs. Place chilies and shredded carrots in bottom of slow cooker. Spoon tomatoes evenly on top. Place meatballs on top of tomatoes. Pour in water, broth, oregano and parsley or cilanto. Cover and cook on low 5 1/2 to 6 hours. Garnish this popular Mexican soup with sprigs of fresh cilanto or mint, and serve with flour tortillas.

    Per Serving (1 cup) 121 calories, 7 g total fat; 7g protein; 9g carbohydrate, 45 mg cholesterol; 48mg sodium. When you go to add this to your diary type in albondigas and use the weight watcher one and the calories will show correctly for this recipie. I'm not a soup person but my husband loved it so enjoy

    In my crockpot right now is bonless chuck roast carrots celery onion italian dressing and water. Later I'll add some egg noodles, the whole house smell incredible!

    My personal fave of my own concoction: 1 whole cut up chicken (about 5lbs, skin if you like) 1 tall boy of any beer and 1 canister of Weber brand Beer Can Chicken, throw it all in the crock pot for 8 hours on low, drain and shred the meat, great on tacos, nachos, in eggs, very versatile!

    I do the overnight oatmeal and I love it. I just make mine plain and add the fruit and nuts and seasonings per serving. It's great.
