I've got it in the oven right now!
I had to make some substitutions based on what I had in the house.
What I used:
7 oz Ronzoni Smart Taste Rotini
1 lb Ground Beef, 8% fat
3/4 Plain Non-Fat Greek Yogurt
1 Package Low-Sodium Taco Seasoning
1.5 Cups 50% Reduced Fat Shredded Cheddar Cheese
1 Cup Herr's Medium Salsa
Ended up with:
Calories: 219
Carbs: 18
Fat: 8
Protein: 21
Sodium: 369
Fiber: 2
Sugar: 2

Or, if you don't want MSG in your meal, spend the extra 30 seconds to make your own taco seasoning mix:
(Recipe is for the equivalent of one packet of taco seasoning)
1 tablespoon chili powder (you can buy hot chili powder if you want it spicy)
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon black pepper

Or you can use plain greek yogurt instead of the sour cream, it tastes the same but has more protein. I recommend the 2% version, otherwise you will have a lot of extra calories.0

I made this today. The only questions I have is, I added the sour cream 3/4 cup to half of my pasta & then layered the rest on top after meat, etc. Was the sour cream supposed to also be mixed w/ the second half, also 3/4's cup sour cream? Confused, hopefully it won't be too dry-it didn't seem like much to begin with. Oh well...secondly, I used an 8x8 pan, it JUST fit all the ingredients to the top, if I plan on serving this, I would suggest anyone to transfer the rest into a bigger container afterwards.
Corn mixed in would be a good healthy mix as well0 -

This made my day, as taco's are probably my favorite meal in the entire world. Not Taco Bell ones, but REAL home cooked (well, as real as it gets when it's cooked by a white girl like myself) ones.
