    White Chicken Chili (The best creamy chicken chili recipe I've found yet)

    3-4 chicken breasts (appx. 1-1 1/2 lbs.)
    1 pkg. McCormick's White Chicken Chili seasoning
    1 can corn drained
    1 can 98% fat-free cream of chicken soup
    1 can Swanson Low-sodium chicken broth
    1 can diced green chiles
    2 cans white northern beans drained
    1/2 c. light sour cream

    Pour broth, soup, chiles, & seasoning in crockpot & mix together. Put chicken breasts in sauce & top w/corn beans. Cover & cook on low for 6-8 hrs (7 hrs gives best results). Break chicken breasts apart w/spoon, add sour cream & stir together. Enjoy =-D

    This sounds amazing! Can't wait to try it. Have you ever figured the calorie count on it? I imagine it is pretty low cal, high protein, just wondering if you have already done the math?

    According to the recipe calculator on sparkrecipes.com, 1/6 of the recipe would be 299 calories per serving & 1/4 of the recipe would be 448 calories per serving (this would be a full bowl of the chili). Sorry, I'm not good at figuring out how much one cup would be. Hope this helps.

  • I purchased a pressure cooker. You can throw frozen meats in there and they cook in less than 1/2 hour and it will fall off the bone. I've made BBQ pulled pork. Shredded beef for enchiladas. The recipes are endless.

    I love the chicken breat covered with salsa in the crockpot! It makes great Chicken Burritos! I love crockpot reciepes.

    Make sure you have enough salsa that the chicken is completely covered ( i use a whole jar!)... sometimes mine gets dark around the edge of the liquid but it still works out okay.

  • I am making beef stew in the crock pot tonight - carrot, onion, potato, peas or corn, and some lean sliced steak. 1 box of low sodium beef broth and cook on low for 5 hrs.

    I've got a turkey ham in my crockpot today, along with some green beans. Not great if you are watching your sodium though!

    My favorite! BTW, Reynolds Crockpot liners are AWESOME!!! So is Recipezaar.com
    Homemade Marinara in the Crockpot
    Turn on your Crock Pot before starting Step 1!
    Step One:
    In a non-stick skillet, cook on medium until translucent(sweat don't carmelize):
    2T. EVOO
    Large Yellow Onion, diced
    Mushroom slices (Portobella or White), optional
    6 cloves of garlic, peeled, crushed & chopped
    Pinch of iodized sea salt

    Step 2:
    Large Can of Crushed Tomatoes
    Large Can of Diced Tomatoes (w/ juice, do not drain)
    Can of Tomato Paste
    Italian Seasoning, 4T.

    Add to Crockpot. Add Onions, Garlic and Mushrooms

    Cook on lowest setting you Crockpot has all day.
    I serve w/ Barilla Plus Rotini. If cooking less than 4 hours, drain the diced tomatoes.

    I have the fix it an forget it lightly crockpot cook book and there's nutritional values on the recipes. That might help in looking for low calorie recipes.

    To the slow-cooker add...
    1 whole chicken seasoned with salt and pepper
    add 1 cup zesty Italian salad dressing over chicken
    cook low 8 hours

    BEST CHICKEN ONTHE FACE OF THE EARTH!!!! Every time I make it people RAVE about it and want to know my secret recipe and how I get it so moist.. It's perfection!

    Oooo, nice thread!

    Here are my fav slow cooking combos:

    1 lg potato, 1 head of cauliflower, 1 leek, nutmeg and white peppercorn

    1/2 pumpkin, 1 lg sweet potato, stir in a can of whole tomatoes at the end, and cinnamon and ground cloves

    2 c of dry chickpeas (then soaked), 1 lg eggplant, 2 stalks of celery, 4 tomatoes, cumin and paprika

    I just cut it all up in chunks, putting in heaviest first, and top it off with filtered water. I add the spices and herbs only at the very end of cooking (about 8-10 hrs). When it is done and begins to cool, I blend it all right in the pot with a hand blender.

    Oh, and just in case, I learned the hard way that garlic does not take well to slow cooking and, if added, should be sauteéd and added only at the end.

    Ok, so I just discovered this one & it is awesome.

    Crockpot cheesy scallped potatoes & "ham"

    6-8 medium idaho potatoes, sliced thin
    1 1/2 lbs. turkey ham (or regular if you like), cubed
    Can cheddar cheese soup
    1 c. lowfat shredded cheese (I used cheddar jack)
    Medium onion, chopped

    After cutting everything up, place half the onion & potatoes in the crockpot. Sprinkle w/pepper & garlic powder, then cover w/half the shredded cheese. Layer the rest of the potatoes & onion & season w/some more pepper & garlic powder. Pour entire can of cheese soup on top & spread out, then cover w/the rest of the shredded cheese. Cook on low for 8 hours & enjoy.

    PS: This recipe tastes even better the next day warmed up.

    yesterday, i did one.
    just put it in crock, sprinkled my fav spices and a 6 hours later, it was perfect!

  • not sure if anything similar to this has already been posted but this is a fave of mine for my slowcooker

    cubed lamb
    tin of chopped tomatos
    4 cloves of garlic
    chopped peppers
    chopped red onion (i use a lot of onion and pepper to bulk it out)
    some salt and pepper
    a squirt of sweet chilli sauce

    i call it spanish stew...no idea why! it just seemed to stick in my head when i made it!
    i dont brown the meat or anthing, just bung it all in, make sure the meats covered well with the sauce. i only cook it for 6 hours but thats cause my slow cooker seems to heat up quite a bit even on the low setting. and i serve it with brown rice
